Cottage Oatmeal Pancakes


Clearly most of you have a natural pancake making ability.

You may think this is an easy task...


Yet sometimes it take 21 years to make a pretty pancake...

I'm not kidding, this is actually the best i've ever made
 pancakes. It's a work in progress but i'm getting there


I present to you my version of
Cottage Oatmeal Pancakes
The Base:
1/2 cup oats
1/3 cup cottage cheese
1/2 cup almond milk
1/2 teaspoon baking powder


The Topping:
1 tablespoon peanut butter
1 medium sliced banana

  6. Yummmmmmy!!! Your "work in progress" looks perfect to me... but then again, maybe I am biased because of your choice of toppings.

    For how can something be bad if it includes chocolate?

  7. I've actually never made pancakes before. It looks pretty easy when you use just the regular mix...not sure about cottage cheese, that'd be harder for me haha! I actually just cooked scrambled eggs for the first time ever the other day. I know how to cook...but only just cook my favorite meals and they are pretty simple.

    As for the hills...I think I'll just come visit you on hill workout days and we can do them together haha. Might be a tad expensive but I get to see you and that's worth it, right?

  9. Oh that looks awesome. I'm really bummed I just had to throw out some nasty looking cottage cheese from the back of the refrigerator- otherwise I'd be ON IT!

  10. Mmm. The pancakes look fantastic! Whenever I make them with oats, they turn into a big, sloppy mess! haha. I'm guessing that cottage cheese holds them together better than eggs. :-)

    Have you tried coconut flour pancakes? They're my favorite!

  13. I love pancakes but haven't had them in a long time! It is too much effort to find gluten-free ones that don't have soy too. These look great! Thanks Kelsey for the great idea. I am going to give these a try!

    I say even if they dont look pretty, as long as they taste yummy, its all good in my book!!!!!!!

  35. I think I'll have to wait another three years to get good at pancakes then :P
    But that said, I never practice because I'm not a pancake fan.
    So I may just have to stick to baked goods.

    I've been craving pancakes lately. I think it's high time I make some!

    I'm really wishing I could find the coconut milk kefir somewhere, because I think it would make a great pancake batter ingredient. I wonder what could replace that cottage cheese,,.

    I never made good pancakes until I got an electric skillet. Now, they always come out great!

  40. I think you've just managed to convince me that I need to practice my own pancake making skills. It's been too long since I've had them, and I fear I may have gotten rusty. I'm not sure if I could let go of my favorite oatmeal breakfast, but a pancake lunch sounds like a super idea :) And a chocolate/banana/nut butter topping? Bliss.

  42. What a great recipe!! They look delicious. And no worries - I can't make a pretty pancake to save my soul, either. I assume it's because I'm more apt to use WW flour rather than AP, but that's also a good excuse for me just being a bad pancake flipper :P

  43. I'm horrible at making pancakes too. Like, I can make them taste good but they usually look like poor hobo pancakes. I just don't understand how people can make them so perfectly round and golden! It's definitely a talent that I wasn't born with.

  45. Holy yum-those look amazing! My pancakes always come out jacked b/c I dont have a griddle. I was toying with the idea of buying one but now don't have enough space in my kitchen so sigh, no griddle for me and I have to either make a large one or a few mini pancakes on the stove top, sigh.

  51. I'm pretty sure all my failed breads in life got turned into pancakes. At which point they continued to be failures, of course, but naturally I just blamed that on the fact that pancake-making and I just don't jive. Ha. No seriously, I used to love making pancakes. But then I got too lazy to pour them all out individually into loonie shapes, so instead I turned all my pancakes into one big bread. I'm smart and efficient like that. ARHARHAR.

    Cottage cheese in pancakes--actually I tried that once but...I just couldn't get over the huge chunks of cheese... So I stuck to ricotta. :-) Lemon ricotta pancakes are BOMB!

  57. Wow! Those look so good! I am jealous :P I don't really do raw bananas though (they hurt my throat!), and I don't think I could last a morning without a bowl of oatmeal these days.

    No shame - pancake making and flipping can be a challenge and a half! Congrats on making a batch that worked out :)

  60. Homemade pancakes are amazing. Mine are never perfect but there are so many great recipes out there that I try a different one pretty much every time. I've definitely done the cottage cheese/oat thing before but not for quite a while. I need to again clearly, yours look AMAZING!

    Your poor finger :( I sliced me finger up REAL good a few months ago making lentil soup....I have the weirdest scar from it now!
