Lazy Chili Rellenos and Breakfast Potatoes

Lazy Chili Rellenos and
Breakfast Sweet Potatoes


I decided to sub pan-fried potatoes and oven-roast them instead. Mix one cubed sweet potato with olive oil, basil, salt and pepper. Preheat oven to 375F and bake for 45 min.


The Lazy Rellenos:

In a baking dish layer 2 large green chili pepper
 (I used Poblanos), and spread about 1/2 cup of cheese
 over top (I used Quark Cheese).

In a separate bowl, whisk 2 eggs and 1/2 cup egg whites.
 Chop in 3/4 cup onion and spices; salt, pepper, cayenne, paprika, thyme, and sage to your liking. Add in 1 cup spinach
 and 1 cup kale. Mix together.

**Pour the egg mixture on top of your cheesy green peppers.

Top it off with any extra green pepper pieces and a little extra cheese, baking for 35 min at 350F.


I adapted and changed this recipe
around a bit to add more greens, different spices, and
more egg whites vs. whole eggs. Both recipes are fabulous,
so make sure to check out Joanne's original version :)

  5. How come I never have breakfasts like these?! A few days ago, I grabbed a dry piece of toast while running out the door. This has inspired me to not sleep in until the last possible second so that I can too can have some delicious rellenos :)

  10. This would be the way to start my day. I think that breakfast potatoes would only be about ten times better with sweet potatoes (and I loved how you oven roasted them). Your modified chile rellenos looked yummy too...and so much easier than the traditional dinner entree.

  24. I've never had Chili Rellenos - must be because we lack the Hispanic influence on our food here in Australia. It looks so good though - I think I'm going to have to change that!

  27. I have a lot of admiration for people who can enjoy breakfasts like these, because I can't seem to stray from my bowl of oats. I tried the whole savory breakfast thing a few times, but it just feels so wrong! I like my days to start out on a sweet note, but this looks like something I'd love to have for lunch or dinner :)

    Oh, and I roasted some sweet potatoes the other day and I remember that you always put a bunch of different spices including oregano on yours. So I did that and it was uhhhmazingggg

    That looks so good! But maybe a bit of a lengthy process in the morning? My mornings don't usually leave me with enough time to wait for anything to bake (which is why I've never done baked oatmeal) but I'm glad you tried this and enjoyed it.
