Lemon Poppy Seed Muffins



Last night I was feverishly baking up a storm.



 
It all started with Lauren's "Lemon Poppy Seed Muffins" which catapulted Aletheia's "Lemon Poppy Seed Basil Loaf" post before
landing back here to Lemon Poppy Seed Muffins again! 
 


After a quick debate of Muffin or Loaf? I stuck to what I know best...

They're gluten-free and vegan and even contain black beans (my sneaky addition)... or because I had some in the fridge I wanted to use up haha.



Lemon Poppy Seed Muffins
adapted from Aletheia Zoe


1/2 tbsp baking soda
1/2 tbsp baking powder
1/2 cup cane sugar
1/2 cup pureed black beans
1/4 cup water
1/2 cup poppy seeds
2 tbsp lemon juice
1 tbsp lemon zest


1. Simply mix dry and wet ingredients seperately before mixing together.

2. Top with pumpkin seeds if you're feeling risky ;)

3. Preheat oven to 365F and bake for 25-30 minutes


*Makes 8 medium sized muffins or 4 large*

  2. LOVE baking! These look delicious, I used to have lemon poppyseed muffins with dinner as a child almost every week. The cartoons make it even better.

  3. Baking is like my favorite thing ever. I think it has something to do with the smell that comes from the oven. Or maybe it's the tasty treats. Either or, I love it :) But I've never actually had a lemon poppyseed muffin... if I had poppy seeds, I'd definitely be giving these a shot.

  11. Mmmmm!!!Lemon poppyseed is very European :) My mama loves lemon poppyseed loaf cake, which she always picks up at the German Deli. Muffins would be awesome this way though... I love baking with lemon :)

  16. They are picture perfect! If you'd told me it was from Green Cuisine I would have totally believed you. Maybe you can sell them your recipe ;) (...even if they can get it here for free. I think they'd take your talent, though!)

  18. Some night I get into the baking mood, and I go to town. Muffins are always fun and a good way to let your creativity shine. I always through random ingredients in my muffins! These look delicious. I've never cooked with sorghum flour before, and I need to try it!

  21. I've never used amaranth flour. I've not come across too many recipes that call for it. Funny, I would have gone for mini loaves - I have a pan that has 12 mini loaf slots that I love to use. Too cute.

  27. I love lemon poppyseed muffins. My grandma used to always make them and they were so good. I may have to ask her to make me a batch next time she comes to visit. :D

    I like how you snuck in some extra nutrients with the addition of black beans. I've always been to scared to add beans to my baking haha.

    You know the way to my heart. I knew there was a reason I posted this recipe. Just for you. I make gluten free lemon poppy seed breads just so you can turn them into BLACK-BEAN containing (woohoo), scrumptious muffins. I couldn't put any black beans in because the thing was so moist as it was!! How was yours in terms of the texture??

    I love the muffins...the seeds on top make them so pretty. And the addition of black beans is genius. I've actually never tried black beans in baked goods...I've heard a lot of people talk about black bean brownies but never made them myself...and never heard of people using them in muffins but I could see that working. Great recipe love! xoxo
