Green Cuisine Cookie Recipe


Other than obvious perks to having worked in a vegan restaurant...


...you end up learning how to make some 
amazing cookies, and muffins too of course!


Chocolate Chip Peanut Butter Cookies
inspired by Green Cuisine


Ingredients:

3 cups spelt flour
1 cup cane sugar
1 tsp sea salt
1/2 cup safflower oil
1/2 cup rice syrup
3/4 cup peanut butter
3/4 cup soymilk
1 Tbsp vanilla


Directions:
A. Mix wet and dry ingredients separately in different bowls
B. Oil a cookie sheet or line with a baking sheet
C. Scoop 15-20 golf ball size dollop onto the pan and flatten with moistened hands
D. Feel free to use olive oil instead of safflower, or maple syrup instead of rice syrup

Bake at 375F for 10-12 minutes

  17. WOW! Lovely cookies! I just used GF flour for the first time last night and was a bit disappointed...I'm wondering if all flour substitutes will lend a different flavor?

    and i am sooo glad that my lil comments and musings and totally honest feedback has been well received :) I have nothing but the best intentions of helping you/anyone not do anyting that long term you may not see in the present term as possibly a slippery slope. as in what i did my whole life til i smartened up about age 25. irreparable damage. ugh.
