Split Pea Soup


As promised, here is the recipe for Split Pea Soup, my favorite soup of all time :)


I made a similar version to the take-out Split Pea Soup I buy from 
Green Cuisine which you may remember from these posts!


Split Pea Soup
adapted from Green Cuisine

5 cups filtered water
1.5 cups dry split peas
2 cups diced onion
1/2 cup diced carrots
1/2 cup cubed potato
1 minced garlic clove
1 tsp sea salt (or table)
a pinch black pepper
a pinch thyme



Directions:
1. Bring water and vegetables to boil in a pot
2. Add split peas, stir, then reduce heat to simmer
3. Partially cover and simmer for 1.5 hours, stirring occasionally
4. Add spices at the end, a few minutes prior to completion
5. Serve, and enjoy! 


You may need to add extra water. I find the longer the soup sits, the thicker it becomes.

makes 5-6 servings

  1. Split pea soup is my favorite as well! I've never made it with potato, but I use TONS of thyme and some fresh parsley and it comes out amazing! You're making me hungry for soup now...

  5. Oh my gosh I love split pea soup! In my last post I put up a recipe I made using yellow split peas (but you can use green as well). I really think you would love it. Split pea soups are one of the most comforting soups in my opinion :)

  8. I've never made my own split pea soup before. I used to really like it, but every kind I see has ham in it! Thanks for the vegetarian version :)

  10. I caught a cold yesterday!! Girl, you're CONTAGIOUS! I think now I need to make this split pea soup :) Right after I take my jumbo muffins out of the oven (I'm not joking, I'm making jumbo muffins right now!) :D

  15. I love peas soup... unfortunately my wife does not, so I see it rarely!! Your soup looks like heaven...sigh...just give me a big bowl and some crackers please!

  19. I haven't had split pea soup in ages! My dad always used to make it with ham when I was younger but I don't really like ham now. This veggie version looks yummy!
