My Dinner was so pretty, I thought I would share it with you!
Steamed and Stuffed Kabocha Squash
First I cut a hole in the top of the Squash and scooped out the seeds with a spoon,
just like carving a pumpkin. Next, I boiled it for 15-20 minutes until tender.
Then I stuffed it with Great Northern Beans
, Broccoli,
Gai Lan, Zucchini, Red Onion, Pasta Sauce
, and Salsa
All that's left to do is pick up a fork, and dig in!
Boiling the squash is a much faster way than Oven Roasting
it, but I think
if you have extra time, a Baked Stuffed Squash would even more delicious.

ReplyDeleteI have a kabocha in my fridge!! My mom bought it though, and I really want to steal it! She doesn't eat that kind of thing usually so I"m hoping she'll just forget about it and I can have it! Lol!

ReplyDeleteWhile I was in Florida for spring break I saw the first kabocha squash I had seen since the beginning of fall... of all places right? I contemplated getting it, but then I decided not to because I didn't feel like driving up with even more food than me and my friends were already crating back with us. Now... I'm kind of regretting it lol. Your stuffed kabocha looks glorious! I love it :D

Stuffed squash is sooo good! But for some reason the only place I've managed to find kabocha squash here is an hour drive away! I don't get why it's so hard to find. :(
ReplyDeletethat is beautiful! i still can't find any kabocha :( my fave way is to steam cubes of it for 15mins then pop in the freezer for 10-15mins the texture is divine!

ReplyDeleteYum! My favorite thing to do with kabocha besides steaming it is making soup! I add spicy candied walnuts to it for a cozy snack!

ReplyDeleteBEST. MEAL. EVER. I introduced my father to Kabocha Squash this past Thanksgiving. He called me on Friday to get my Rosemary Roasted Kabocha Squash recipe for one of his work colleagues. Apparently, he has been raving about since November, & they all can't wait to try it! HAHAHAHAHA!
