Cookie Recipe


Chocolate Chip Peanut Butter Oat Cookies
created by Snacking Squirrel -vegan-wheat free-


In a bowl, measure out 2 cups of spelt flour (or any other type)


Add 2 cups of oats (quick oats, rolled oats, or oat flakes)


Stir in 2 teaspoons baking powder and 1 teaspoon salt


In a seperate bowl, mix together 1/4 cup oil (I used olive), 1 cup
brown sugar, 3/4 cup peanut butter (or almond butter), 
1/2 cup soy or almond milk, and 2 teaspoons vanilla extract


Doesn't have to be perfectly mixed, just enough to get messy!


Before adding the wet ingredients, feel free to add in as many
 chocolate chips as you'd like. I used 1 cup dark chocolate chips


Use your muscles to mix the wet and dry ingredients together


On a non-stick baking sheet, or one lightly sprayed with oil
you want to roll the cookies into "big balls" lol.. usually its about 
1/3 of a cup of dough rolled together... then flatten into disks

Note: If the cookies are crumbling, add some water to the batch


Preheat oven to 350 Fahrenheit and bake for 20-25 minutes


These cookies are SERIOUSLY SIMPLE and fairly healthy!

  5. Chocolate chip oatmeal cookies are my favorite kind of cookie. Thanks for the recipe, girl! I've been wanting to bake up a batch of muffins or cookies, but the weather has been too darn hot to be slaving away in the kitchen. I guess I shouldn't complain, but it would be nice to have some cookies along with my sunshine!

  11. these are glorious!!!!!!!!!!!

    for me, b/c spelt still contains gluten, this is a no-go. But...i think i could grind 2c of oats into oat flour and then use 2 c whole oats and roll it that way. I bet adding raisins would be fun too! Gosh, so many ways to do this! I love how they are like little patties, rather than cookies. 20-25 mins is a long time, so i know they are dense and good and probably really moist from the PB. Ok i need to make these!

  36. Those cookies sound and look amazing!
    One question: Spelt flour has gluten. Do you find that the cookies bother your tummy? I know that you have gluten intolerance and I think I do too, so I'm staying away from gluten right now. Just wondering if you have problems with spelt.

    1. your PB jar has pictures of the nuts on it (not to be mistaken with beans from far away)
    2. the vanilla mix looks like coffee and has desirable bubbles in it
