Blueberry Banana Oat Muffins


Yup, I finally "Mastered the Muffin"


Oil-free, low in sugar and 100% Snacking Squirrel created


Nutritionally, they're around 250-300 calories per jumbo sized muffin


Blueberry Banana Oat Muffins
created by Snacking Squirrel

1 cup rolled oats
1/2 cup brown sugar
2 large eggs  
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
1/3 cup apple sauce
1/4 cup buttermilk
3 medium ripe banana
1 cup blueberries



Directions:
A. Preheat oven to 400F
B. In a bowl, beat eggs vigorously before mashing in your bananas. Then stir in the brown sugar until the lumps disappear. Add the applesauce and buttermilk before setting the bowl aside
C. In a larger bowl, add in the rest of your ingredients (all the dry) except for the blueberries which we'll add at the end. Stir the dry ingredients until evenly mixed
D. Pour the wet batter into the dry batter and lightly fold together. Do not over stir- common mistake! Over mixing de-fluffs the muffs! ... usually 12-15 stirs with the spatula is good enough
E. Just before you're done, add in the blueberries. Scoop into muffin pan. Top with oats
F. Bake @ 380F for 20-25 minutes

Unless I specify that it's been adapted, it's 100% my own, baked with love :)

    These look sooo good, definitely worth all that late night muffin baking.
    It's so awesome that you make your own recipes - I'm definitely more of an adapter than a creator, but I have come up with things on a whim :)

  7. Those look so good! I'm bookmarking this recipe :D I made some granola and thought of you. The smell reminded me of you for some reason. I also mentioned your muffins in conversation yesterday when me and some other friends were talking about bakery goods. It made me a little said I admit because I wish that you lived.. like right down the street from me.

    Love this recipe...Banana muffins are my very favorite (and the addition of blueberries surely makes them even better!). Do you think I could substitute a GF all-purpose baking mix for the pastry flour?

    I'm so impressed at your baking skills. I can follow a recipe really well, but anything more than some minor tweaks is beyond me. I do try to create things on my own, but I've yet to have anything turn out quite right. Now I hesitate to try because I hate wasting so many ingredients!

    So wish I could sink my teeth into one of these...

  54. I was rather excited when you told me about these :) My big brother is home now, so I may have my own go at producing a snacking squirrel masterpiece :)
    Sadly most of the stars came off my nails whilst studying, which is not cool in the slightest!
    Glad these muffins went better than the flat-topped ones, but there's something kind of cute about the flat topped ones!

  64. @Anonymous Yes, it would still work. You may need to add extra banana or fruit to add sweetness if you like, but otherwise, it should be fine :) xo

  66. I just made these for my office and they were gone in a second -- everyone loved them and couldn't tell how low in sugar they were. The recipe was so easy and they muffins turned out so moist and full of oats and oozy blueberries. Great job! Can't wait to try more of your recipes!
