Christmas Cookie Recipe

Okay, the cookie post is back in action after yesterdays
post when I ran out of space. You can see part one here.

I posted the recipe below, near the end of the post :)

Vegan Gingerbread People
Created by Snacking Squirrel

1 Tbsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/8 tsp cardamom
3/4 cup brown sugar
1/4 cup molasses
1/2 cup earth balance
1/4 cup soy/nut milk

Directions:
A. Preheat oven to 250F
B. Mix dry and wet ingredients separately
C. Add dry and wet ingredients together
D. Form dough into a ball with hands and place on counter
E. Roll out (1/2 inch thick) on flat surface with a rolling pin
F. Use cookie cutters to cut out shapes, or roll into balls etc.
G. Place on greased baking sheet
H. Bake for 10-15 minutes, let cool

Then I melted 1 cup of White Chocolate Baking Chips and spread it
on the cookies before garnishing with chopped Cherry Candy Canes!

  2. Very cute - I'd love to try these with a chocolate frosting too.

But wait...is it vegan to eat gingerbread people? ;) Have a great Thursday, Kelsey!

  10. These are so delicious looking. And I bet the melted chocolate tastes so delicious (much easier than making frosting!) I have a whole bag of candy canes that need to be used. This would be the perfect recipe to try. Thank you for sharing with me. I hope you have a wonderful day!

  12. Thank you! You know...maybe I've been living on another planet, but these are the first gingerbread people I've seen on a blog this year. I bought all the ingredients to make some last weekend and haven't gotten of my butt to make them---maybe tonight? You are my baking inspiration :)
