Green Oats n' Yogurt Parfait


"Balance is Key" ... this is becoming very true for me as I'm enjoying 
balancing out my Proteins, Carbohydrates and Fats with each meal. 
The sugar cravings are passing and I have less anxiety and ups/downs!


This morning I made a really yummy Oat n' Yogurt Parfait... similar to the 
Groovy Green Oats Recipe. Only this time I used Gluten-Free Only Oats, 
Greens+ Instant Smoothie Mix, 0% Plain Probiotic Yogurt and Brown Flax Meal


In a separate cup I cooked up 1/2 cup oats with water,
 then added the green smoothie powder and cinnamon




Then I poured 1 cup of yogurt on top


Finally, topping with a scoop of ground flax seeds


Yummmmie :)


I'll be posting a lot of recipes and random eats over the next while. 
Don't worry, I will still post updates of people, places and things 
(including me)... but right now it's all about the food...


And the deer that keep creeping around my yard! 


Could it be the same one I befriended here?

  1. Oh, balance is key to everything-food and life! It is the hardest thing to learn-and there are many ups and downs with it.

    I still can't believe how friendly those deer are. How can you get so close to them without them running away?

  4. I love when you post about what you eat because it's always so creative and tasty looking!! Those deer are too funny! If they keep bothering you, tell them they can come to my yard instead ;)

  5. I love adding smoothie mix to my oatmeal. When I go meatless for a span of days, it's a good way for me to sneak in a little extra protein. :)

  6. I know this is a really shallow thing to say but...I love that vanilla creme bottle! It's so pretty! Speaking of which, those deer are beautiful. I can't believe how close they are to you!

  8. I just came across your blog through cleaneatingchelsey and I instantly felt a connection to you and your story. I too was a vegetarian/vegan for half of my life but as I grew older shared your similar health problems. I now eat grass-fed beef and organic chicken and feel a world of difference. Your eats look delicious and the deer are the perfect mysterious touch :). I will definitely be reading from now on!

Lookin' forward to all your new great recipes :) I'm not giving up sugar because I don't suffer any obvious negative effects when I have a bite of it (when out socializing with friends), but on a daily basis I try to eat mostly healthy foods. I LOVE bitter flavors (black coffee, unsweet chocolate), grassy flavors (hemp), sour flavors (kefir, kraut)... I'm sure you'll come upw ith some great thangs ;)

  11. i love ground flax! it's so versatile! you can make flax bread in a bowl with 2tbsp ground flax, 1tbsp butter, 1 egg and 1/4tsp baking powder. microwave for 2 mins and ding cut into slices :)

  13. When I lived upstate NY there were dear there that would come everyday and let us pet them and feed them out of our hands! They were too sweet!!!!

  16. kelsey- im really looking forward to the meals you'll be eating now that your GF/SF. I have to say that after doing some research, I'm finding connections with diet (glutenous food) and my mood, along with other digestive issues, and I swear its all connected. When you posted about your symptoms, it was an eye opener for me. I always knew my mood, the bloating, swelling, etc was probably linked to some of the food I ate, but never really came to terms with it until I saw it in writing after doing some research. I'm so glad you are going through this change right now and posting about it because I can relate so well!

  18. Oh those sweet deer. My parent's house always plays home to a herd of deer, and it makes me miss beautiful Colorado. I'm so glad to hear that your new diet changes are decreasing your anxiety! Yay for good foods! Thank you for sharing, sweet girl.

  20. When I used to visit my Grandmother in Victoria, deer used to come into her yard and eat her roses! She would be quite unhappy with these creatures, but I did (and still do) thing they are enchanting animals. All I get in my yard are snarky little foxes!
