Wild Salmon Salad

Back when I still ate wheat, you may recall me enjoying
my fair share of Wild Salmon Wraps from Planet Organic

Wild Skinless Boneless Pink Salmon from Raincoast Trading

But I wanted to make not only a gluten-free version, but a less
expensive alternative as well. I also found a yummy Canola Mayo
from Spectrum Naturals which I was excited to try out!

Wild Salmon Salad

1 Tbsp mayonnaise
1 Tbsp capers
1 stalk chopped celery
1 stalk chopped green onion
1/8 cup chopped onion
1/2 diced tomato (optional)
Pinch salt and pepper

Simply mix everything together in a bowl. The recipe isn't identical to
the original one, but fairly similar. I didn't have red onions unfortunately :(

Spread 3/4 of the salad on a tortilla, I used a brown rice of course...

Then fold into the desired wrap shape and enjoy!

It makes a great portable lunch box meal too!

Basically showing you every angle haha, I can't help myself ;)

Tip: Leave out the tomato to taste more authentic to Planet Organic's

Tomorrow i'm posting Gluten Free Muffins!

Stay tuned to see which type I make, based
on your ridiculously yummy suggestions!

  18. That's the brand of canned salmon I buy too! I always get the boneless skinless stuff, even though the regular kind is cheaper because the bones totally creep me out!!!

  21. Hmmm...wonder if that salmon would do good in your breakfast egg wraps...
However...not sure how I feel about fish and cheese...never tried it though...just seems "off" or something.

THank you for your recent comment on my blog. It meant more than I can tell..

btw, how do you not get your wraps to crack? do you store them in the freezer or fridge? mine usually crack unless i grill them in my george foreman.
occasionally ill get one that is a perfect wrap... but i never know what causes it. got the secret?
