Balanced Meals and Giveaway Winners


My efforts to balance my meals went a bit off track these past couple weeks, 
but i'm back to portioning my protein, carbohydrate and fat ratios


Oatmeal and egg whites with a sliced banana, peanut butter and cinnamon


For lunch I made a healthy stir-fry with roasted kabocha squash


Then I mixed in a lot of different things...


 Sliced turkey sausage, black soy beans, corn, broccoli, celery,
spinach, swiss chard, green beans, bok choy, cucumber and mustard


Exactly what I needed, stir-fries always fill me up :)


And my dinner last night was also yummy; For the first time, I balanced 
my sweet potato addiction by choosing one, not seven, to bake in the oven


Large baked purple yam with cream cheese scrambled eggs,
 greens (swiss chard and spinach)... with a dollop of salsa

  4. The sweet potato with eggs and greens looks sooooo good. I just ate a sweet potato, but I was too hungry to be creative...just mashed it with a bit of salt and margarine. So yummy, even if it was too dull to photograph!

  7. I don't know how your stir fries always turn out AMAZING, but they do. I love that you added swiss chard, that's definitely sounding great right about now.

    Oh goodness, cream cheese eggs sound delectable. Especially on top of a sweet potato. Kelsey, basically what I'm saying is, will you come be my personal chef? :-)

    So you find that oats don't bother you even though you're GF? Do you buy the ones that are guaranteed uncontaminated?

  16. I love that every time I visit your blog, I leave wanting either a stir-fry or a sweet potato. I'm making white bean and kale soup tonight, but tomorrow it's stir fry a la Kelsey!
