Who doesn't love Brownies and Cookies! Unfortunately,
many people are still trying to stick to their New Years Resolutions,
which means no brownies or cookies allowed... right?... WRONG!
Inspired by this post, I have concocted a super healthy recipe for
sugar-free, gluten-free, high-protein, vegan brownie cookies :)
Carob Chip Brownie Cookies
Created by Snacking Squirrel
300g silken tofu
2/3 cup pure oats
1/3 cup carob powder
1/3 cup unsweetened apple sauce
1/4 cup unsweetened carob chips
1 Tbsp vegan protein powder
Few Drops stevia liquid
(vanilla
)
1/2 tsp baking powder
1/4 tsp baking soda

Dash cinnamon
+ nutmeg
Pinch sea salt
Directions:
1. Preheat oven to 380 Fahrenheit
2. Grind oats into flour using a food processor
3. Mix dry and wet ingredients separately in 2 bowls
4. Add wet mix into dry, stirring briefly with spatula
5. Scoop 1/3 cup batter (per cookie) on a non-stick baking sheet
6. Bake for 20-25 minutes
It's hard to gauge how much stevia to use. Generally it's enough sweetness to
replace 1/3 cup - 1/2 cup plain sugar, or trial and error to find the right amount.
Each recipe makes 5 cookies; Each cookie is only 150 calories!
A perfect not-so-sinful indulgence for when you need a boost!

I find carob to be a bit bitter, I guess I could add more Stevia to sweeten it up!

ReplyDeleteI am so digging these sugar free recipes...now I just need to find a sweet tooth. Have you felt, snce your change in diet, a distint disincline for sweets? That's how I feel. I just want savory veggies and protein and fat all the time and maybe some fruit...I feel like a "native eater"....I'd be eager to know how the change has effeted you so far...after you have gone through the withdrawal. Do you crave sweet potatoes less, too? Ah...so many q's. Nevermind ansering them ... just fuel for future posts I suppose. (0:
