Healthy Bean and Spinach Chicken Burgers
Ingredients:
2 oz raw chicken breast or tofu
1 cup raw spinach greens
1/3 cup white beans
(any)
1/8 cup white onion
2 tsp lemon juice
1 small clove garlic
1/4 tsp dried dill
1/8 tsp cayenne pepper
1/8 tsp cumin
Dash salt + pepper
2. Scoop blended mixture onto a non-stick skillet
, forming into a burger shape
3. Cook on medium to medium-high heat for 5-10 minutes
4. Flip burger and continue cooking on other side
5. (Optional) Add cheese before removing the burger patty
(I used a slice of Emmental Swiss Cheese from L'Ancêtre)
6. Plate on a Bun, Bread or Tortilla
I used a Brown Rice Tortilla
from Food for Life
To add more flavor, with or without cheese, try
Makes 1 Serving

ReplyDeleteThat's a very creative recipe, actually. Most people I know who would put beans into a burger are vegetarians...and thus unlikely to add in meat.
If one lacks a food processor, could that be mimicked with minced chicken and mashed up beans, all smooshed together?
