Let's face it, it's Friday, and we deserve a treat! Why not reward
yourself with some Coconut Covered Chocolate Energy Balls Orbs!
I need to credit Eden's Eats for the inspiration
behind these, thanks to her recipe for "Amazeballs"
Energy Orbs
adapted from Eden Eats
1/2 cup almond butter
1/2 cup wild honey
1/2 cup unsulfured raisins
2 Tbsp unsweetened cocoa
1 tsp vanilla extract
or powder
1 tsp ground cinnamon
1 cup rolled oats
or quick oats
1/3 cup coconut flakes
(for topping)
Step 1: Scoop almond butter into a bowl
Step 2: Add oats and a pinch of sea salt
(optional)
Step 3: Add cocoa powder, cinnamon, and vanilla
Step 4: Add honey/sweetener and raisins
Step 5: Blend well and roll 1-2 Tbsp of mixture into "balls"
Step 6: Sprinkle shredded coconut in a bowl and place ball inside
Step 7: Roll ball around in coconut, gently pressing the flakes in to stick
using quinoa flakes
instead of oats, or opting to make them "naked" without coconut!
Each batch makes approximately 8-10 energy balls
YUM! I was daydreaming yesterday about making high protein chocolate "balls"! I'll let you know if I give it a try - but these do look amazing!!!
