Dinner for Breakfast and Salad for Supper


Leftovers from Dinner make the best Breakfasts


Roasted Kabocha Squash mixed with Yogurt and Blueberries


Olympic Organic 0% Probiotic Yogurt


And a sprinkling of Cinnamon


And it tastes even better when you re-heat the squash beforehand 


For Lunch, I scrambled 3 Egg Whites with Spinach, Onions,
 Wild Lean Beef, Sauerkraut, Chili Powder, and Black Pepper


And scooped it onto a Brown Rice Tortilla


Then topped with pieces of Emmental Cheese


Then I placed the wrap in the George Foreman Grill


Grilled, flaky, and delicious!


And finally, Dinner...


Organic Summer Salad


Grilled Chicken, Avocado, Chickpeas, Tomato, Cucumber, Lettuce, Red Onion, 
Broccoli Sprouts, and a quick 'n simple Curry Mustard Dressing (recipe to come)

    Also, I seriously thought, at first glance, that you had doused checkers fries in yogurt and blueberries for bfast...ick!

  3. I haven't had squash for breakfast, but I love sweet potato "hash browns" which I think is similar! I am always totally inspired by your food combos!

    Also I've never tried sauerkraut... where would I find it in a grocery store?

  13. I've never had dinner for breakfast! Unless you count cold pizza! Yummers.

    Sauerkraut is the best. I always put it on toast w/ some avocado and paprika. Makes for a great snack :)

  14. I had breakfast for dinner last night! I have never tried squash like that though... interesting idea! I love to stir canned pumpkin into yogurt and I imagine it would be similar.

  17. Yogurt, squash, and blueberries...I can usually see how interesting combinations work, but this one might just be beyond me. But hey, if you enjoyed it, awesome! Great for repurposing those leftovers.

    PS - Thrifty's has that yogurt on buy 1 get 1 free...in case you need to stock up :D
