Chocolate Banana Coconut Pudding


Most of you suggested I use my new coconut milk in oatmeal, which I can't wait 
to try! But first, I decided to whip up a decadent healthy Coconut Pudding 


Chocolate and Banana Layered Coconut Pudding

Coconut Pudding Layer

1 Tbsp psyllium fiber (optional)
2 tsp tapioca starch* (thickener) 
1 small ripe banana
1 pinch ground nutmeg



Directions:
A. Blend everything, except the tapioca starch, in a food processor until smooth
B. Pour mixture into a saucepan and slowly bring to a boil
C. Gently add the tapioca starch, using a whisk to blend together
D. Whisk vigorously as mixture thickens, remove from heat, continue whisking
E. Pour into a serving glass and let sit to cool down




Chocolate Pumpkin Protein Pudding Layer

1 Tbsp cocoa powder
Dash of stevia


Directions:
A. Place ingredients in a bowl and mix together until smooth
B. Scoop on top of the Banana Coconut Pudding layer


Garnish with sliced banana and shredded coconut


The pudding tastes great both warm and cool


Mmm, I highly suggest you try this out when you're in 
the mood for something sweet, savory, yet still nutritious!

  5. Both recipes look awesome!!! I'll have to get some tapioca starch or arrowroot powder though because I just discovered that cornstarch gives me terrible tummy aches!

  10. DEFINITELY put coconut milk in smoothies :) It makes them so much richer and tropical than just regular/almond milk. I can't wait to make one in the morning now :)
