I purposely haven't been buying yogurt in order to force
myself to switch up my typical Fruit and Yogurt Parfaits
Sliced Banana, Nectarine, Raspberries, and Blueberries
topped with Cottage Cheese and sprinkled with Cinnamon
The protein in cottage cheese, versus yogurt, keeps
me feeling full and energized throughout the morning
After heading out to finish errands, pick up lunch, and do a little window
shopping, I came home and made a Protein Latte since I needed the boost
For dinner I baked 1/2 medium Kabocha Squash
in the oven at 400 Fahrenheit for 45-50 minutes
Then I stuffed "The Green Gobbling Squash Monster" it with Stir-fried Vegetables
Broccoli, Zucchini, Bean Sprouts, Collard Greens, Leek, and Red Onion
The vegetables were seasoned with Onion Powder, Basil, Dill,
Cayenne and Black Pepper, with Yellow
and Brown Mustard
Yay! all hail the wonderful kabocha squash! loooove it. have you had it mashed? although roasted is my favorite way, i absolutely love it steamed then mashed with some coconut milk or almond milk and some cinnamon- so good!
ReplyDeleteI bet cottage cheese and cinnamon is delicious. Never thought of pairing those flavors--but it makes me think of rice pudding with the texture. I get in breakfast ruts, too. You're good with trying to switch it up, though! I just eat the same thing until I grow to hate it, lol.

ReplyDeleteLast night I dreamed about kabocha squash! And I've never even tried one because they're hard to get around here... my subconscious is telling me that I need to find one, I suppose. And if they're as delicious as your photos look, of course I must obey my subconscious! ;)

ReplyDeleteI haven't had cottage cheese in ages. We always have Greek yogurt around the house, so I find protein wise it's just as good as cottage cheese, without all the sodium. But sometimes that salty, delicious cheese really hits the spot. Might have to pick up some this week :)

Everything about this post looks absolutely divine. I still have yet to try the godlike squash that I hear so much about, but I always seem to surpass it at the grocery store. Come the winter months I'm sure I will be switching between that sweet potatoes on a very regular basis, mmm!!

Mmm! I LOVE making cottage cheese parfaits! My latest addiction is stirring in peanut flour and then topping with bananas, carob chips and cinnamon. It's SO good!

I have never mixed anything sweet with cottage cheese - only savoury. Sounds good though.
