It's Raining Cats and Squirrels!


Just got back from a bike ride and got caught in a downpour!

Gonna make this a quick post so I can hop into the shower




Legitimately yummy, chocolate and coffee dreaming of eachother...


Time for some more Green Cuisine vegan take-out!!!


Salad greens, arame seaweed, pasta primavera salad, corn, stewed
 kidney beans1/2 quinoa burger patty, tofu lasagna, molasses tempeh, 
squash, broccoli, kale, red onions, sprouts, ketchup and mustard


I also tried a thinkProtein bar for the first time...


The Chocolate Fudge flavour is really yummy!
Now, onto an exciting and overly healthy dinner...


I'm calling it "Green Gobbling Squash Monster"


Consisting of a HUGE chunk of Kabocha squash filled 
with a Chicken n' Veggie Stir-Fry with mustard mixed in


I've also tried this as squash and veggie mashed potatoes which is fantastic!

That looks like an amazing dinner! I would love to make the exact same thing, except without the chicken and maybe another form of veg protein. It looks so pretty and colourful and good! Can you tell I like squash? I really love it. I love kabocha. I got hooked on it during my days on strict macrobiotics. Kabocha and adzuki beans was a classic meal for me.

I looove squash. I've never tried kobocha but have seen it all over the blog world and want to try! I love spaghetti squash and butternut squash, and recently have been eating lots of summer squash!

I love squash. Although, hubby and I both prefer summer squash, unless it's stuffed into ravioli and then I'll eat whatever. ;)

And I'm a huge fan of the Think Thin bars. But they're a little pricey for as much as I like to consume nutrition bars... If you go back for more of that brand, I suggest the white chocolate. It's like a serious candy bar...

I am a big squash lover! My favorite is Spaghetti Squash with butternut in close second.Sadly I think Kombucha is my least favorite, maybe I don't cook it right?

PS. I have never heard of a more delicious sounding muffin!

i absolutely love pumpkin. it started when i moved to Australia and found pumpkin in every restaurant! pizzas, salads, pastas, sandwiches, they use it for everything. beetroot is another popular one (although i can't say i'm a fan. something about the smell...)

your salad looks delish by the way. besides chocolate (and cereal) salads are my favourite food group :)

My best friend just came home from Europe and she got a me a cow mug that looks similar to yours from Holland. It has a tiny little cow inside it lol I really love it.
I've never tried Kobucha squash but I hope to soon. I hear it's very sweet which will be interesting.

I love all kinds of squash - kabocha, acorn, butternut. They're great steamed, roasted, and baked, and I love adding a drizzle of maple syrup and butter at the end. I don't really eat them until they're in season though, so I'll be getting into them again in the autumn and fall.

I love squash with a PASSION :) Hehe.. my favourite is kabocha but I also love butternut and acorn. Your monster looks awesome, altough I am pretty sure I could tackle him without much difficulty ;)

I so wish that I had a take-out place like Green Cuisine... because I want to demolish that box so badly. Everything looks so delicious and healthy, oh my I think I'm drooling.

Omigosh your cow cup is like the cutest thing ever, and I love the name of your dinner :) It really looks like it's gobbling up the stir fry.

I'm a big fan of squashes. I love all the ones I've tried, but my favorite would have to be butternut. I love it cut into fry shape, baked with a bit of maple syrup (or EVOO if savory), and dipped in ketchup or nut butter. Nom.

I LOVE squash...butternut for the fall -- simply roasted with a bit of butter and brown sugar. And I also love spaghetti squash as a substitute for, well, pasts!

Oh my goodness, I LOVE your mug! That'd be perfect for my cow obsessed sister :P

I like my squash baked in the oven with garlic and herbs - But baked until its really caramelised yumyum. (AKA burnt by other peoples terms :P)

You are too cute!! I love that Green Gobbling Squash Monster!!! haha so funny! It looks so delicious, I LOVE squash. Kabocha is one of my favs. I love just roasted it and sprinkling a little cinnamon and PB on it. It's like dessert! I also love sweet potatoes, do they count? I either make them into fries or do the cinnamon-y PB thing. Yum. Having sweet potato fries right now. :)

I am squash obsessed. Pretty sure I could eat it every single day and never get sick of it. I adore buttercup and love it just straight up plain roasted, either right from the oven or cold leftover from the fridge. I could go for some right about now actually.

I am CONSTANTLY going to the korean supermarket near me and buying kabocha. Then roasting them and eating HALF (like 2 pounds of squash) for dinner. It's insane. And delicious. I love that you love squash.

Muahaha I love your Green Gobbling Squash Monster dinner! Kabocha squash is BY FAR my favorite! Haven't been able to find it for months though...Once the winter months roll around it better be making a reappearance in the grocery store!

I LOVE squashes of all kinds. My fave is probably the yellow crookneck/summer squash. Roasting is my favorite way to prepare them but I'll take them pretty much anyway lol.

OMG I LOVE SQUASH!! Can you believe that any kind of squash, including pumpkin, has never graced my lips until I was 21 years old! I was deprived! haha

I love butternut squash best, especially steamed with a bit of salt and LOTS of pepper on it. Yum Yum! and Squash soup with curry in it. I could go on and on.

Am I squash lover? HECK YES!!!!!!!!!!! To the infinite degree m'lady ;) My favorite would be.. kabocha! The one in front of my face on your post lol. If only I could reach out and eat it mwahaha. I love roasting them with coconut oil, cinnamon, and maple syrup. That muffin looks so glorious. No wonder they have muffins called Morning GLORY muffins :D It's pouring down here. My last week in FL and there's this crummy weather :\ Atleast it'll help the weather cool down?

Your salad looks epic. I do love squash. I like acorn squash with brown sugar + coconut oil, and I like spaghetti squash...and green zukes, which I guess are technically a kind of squash, too. :-)

I haven't had squash in forever because I didn't like it the last time I tried it but seeing as that was over a year ago, I've been thinking about seeing if my tastebuds have changed. Which I think they have.. so I don't know why I haven't picked up a squash yet.

wow the sqaush monster looks like a WINNER!!!! so does the muffin.

also - I will be heading up to seattle soon on a family trip. We are spending a few days hiking near port angeles and then off to down town seattle for a few days. I am from texas so I have NO idea about geography up north and I do not know how close any of that is to you....BUT if it is near you I was thinking of a meet up maybe??!!! and if not, then you will just have to come to austin some day :)
