Chicken Tenders and Honey Mustard Dip


I lived on Chicken Tenders as a kid. It didn't matter what restaurant 
I went to with my family, me and my brother would always order Chicken 
Strips and Fries; Breakfast, Lunch, and Dinner. Although I clearly learnt to 
broaden my culinary taste buds, it's time I take a walk down memory
lane by creating a healthier version of my all-time favourite meal


Chicken Tenders

3/4 cup dry cereal flakes
1/2 cup brown rice cereal
(or use porridge flakes)
1/2 cup flax and fiber blend
(or sub 1 Tbsp flax seeds)
2 medium chicken breasts
1 large whole egg
1/2 medium lemon
2 tsp garlic powder
(or sub 1-2 garlic cloves)
1 tsp mustard powder
1 tsp paprika
1 tsp black pepper
1 tsp sea salt
1/2 tsp cinnamon

Step One: place all your cereals into a bowl


Step Two: add in your spices and seasonings


Step Three: crush with your hands, or if you 
want a finely ground mix, use a food processor

Step Four: Cut chicken into chosen sizes: strips and/or nuggets 


Step Five: toss into a large Ziploc bag


Step Six: squeeze some lemon juice into the bag


Step Seven: crack an egg on top


Step Eight: seal Ziploc bag and shake/massage/mix thoroughly 


Step Nine: pour in your crushed dry cereal mixture


Step Ten: repeat step eight


Step Eleven: lay coated chicken tenders 
on a baking pan lined with parchment paper


Step Twelve: preheat oven and bake at 350 Fahrenheit for 20 minutes


Serve with my Honey Mustard Dipping Sauce below


Honey Mustard Dip

1/2 cup light mayo
1-2 Tbsp honey
1 Tbsp brown mustard
(and/or yellow mustard)
1 pinch paprika



Step One: simply whisk everything together and pour into a small bowl


Is it just me or do you also see a person shaped and formed on 
the top of the dip? It looks like a strange yoga man who is crossing
 his legs, and waving his arms across his head! Do you see it too?


Now here, it looks like his arms are crossed, hands resting on opposite knees!


Okay, let's stop watching the clouds dip take different
 shapes before anyone thinks we've "gone off our rocker" 


And if you don't eat meat and would like a

Wrapped into a Brown Rice Tortilla 


Oven Baked for 10 minutes at 400 Fahrenheit


Then it was a "Meat and Potatoes" Dinner


BBQ Bison Meat and Garlic Mashed 
Potatoes with Steamed Broccoli and Kale
