Friday Pancake Flipping


I've spent most of the day lounging around at home dealing with an annoying 
cough and cold. Normally when I'm sick, like you may remember here, all I want 
is hot tea and warm soup... but for whatever reason, I had pancakes on my mind!


And not just any pancakes! I wanted healthy, 
flourless, delicious, fiberlicious protein pancakes!


Banana Oatmeal Fiberlicious Protein Pancakes 


Ingredients:

1 medium banana
1/3 cup quick oats
1/3 cup egg whites
2-3 Tbsp water
1-2 Tbsp protein powder
1 tsp ground cinnamon
Dash of stevia/sweetener

1 Tbsp unsweetened carob chips (optional) 


Directions:
A. Combine everything into a bowl and stir until blended
B. Place skillet/pan over medium to med-high heat 
C. Pour batter onto hot skillet
D. After a couple minutes, when bubbles start to form on top, flip to other side
E. When both sides are cooked, remove from pan and devour!


Not as pretty as my Cranberry Oatmeal Pancakes, but still scrumptious!


And because they're so healthy, I'd like to think I'm
 doing my body some good to help fight off this cold!

Cranberry Oatmeal Pancakes


 Cranberry Oatmeal Pancakes
Created by Snacking Squirrel 

1/3 cup egg whites
1/3 cup frozen cranberries
1 Tbsp hot water
1/2 Tbsp ground cinnamon
1/4 tsp baking powder
Few drops liquid stevia


Directions:
1. Mix everything together in a bowl
2. Pour over non-stick griddle, medium/med-high heat
3. When bubbles begin to form, flip pancake
4. Plate and serve with your favorite nut or seed butter


For me, it's all about Raw Hemp Seed Nut Butter!


These pancakes are Sugar-Free (minus cranberries),
Gluten-free, Dairy-FreeFlourless and High in Protein

Squirrelly Banana Buns


You may recall back when I first made Squirrelly Buns here 


The reason I decided to make them again was because I got
 a package in the mail that inspired me to revamp the recipe


Pamela's Products was more than generous
 enough to send me two of their baking mixes to try!!!


They're my favorite gluten-free company, which I believe
 carries the best quality baking mixes, cookies and snacks


Mmm just wanna grab a bite of that cake :)


So yup, you know what that means... Squirrelly Buns
 are now gluten-free! I was also inspired to add mashed
 bananas to my recipe, thanks to Monet :)


Squirrelly Banana Buns


Step One:
1/3 cup soy milk
1/3 cup warm water
1/4 cup brown sugar
1 Tbsp softened butter

A. Add milk + water to bowl and whisk in butter + sugar
B. Stir in 1 packet of active-dry yeast
C. Cover with a cloth and let sit for 10-15 minutes


Step Two:
2 mashed bananas
1 large beaten egg
1/4 cup canola oil
(whole 680g package)

A. Mix bananas, egg, oil + vanilla in a bowl
B. Add the other bowl with the yeast together
C. Slowly pour in your baking mix flour
D. Using your hands, blend and knead dough
E. Shape into a ball and cover with a cloth
F. Place in a warm area for 1 hour to rise



Step Three:
2 Tbsp softened butter
2/3 cup brown sugar
1-2 Tbsp cinnamon
1/3 cup raisins + nuts
(I use chopped walnuts)

A. Preheat oven to 365 F
B. Sprinkle flour on counter and roll out dough
(Helps to save aside extra flour to use if dough sticks)
C. Keep rolling until you have a rectangle-like shape
D. Spread on butter, then sugar, then cinnamon
E. Sprinkle on raisins and nuts 
F. Gently roll from one end, working to the other
G. Cut into 2-3 inch pieces and place in greased pan
H. Bake for 30 minutes
