Shrimp and Spinach Shell Pasta Alfredo

It's what was for dinner last night and what's on the menu as leftovers for tonight


I'm in love with alfredo especially when I make my coconut alfredo sauce

Dining El Fresca


Buttered Prawns with Macaroni and Peas using Barilla Gluten Free Elbow Pasta


I topped the gluten free pasta with prawns and peas I stir-fried
 in a pan with butter, then finished it off with a squeeze of lemon


Speaking of lemons...


Who doesn't love the classic, refreshing taste of
Fresca soda pop? Especially with a little twist...


This is a great anticipatory Summer drink for sweltering afternoons


El Fresca Spritzer

1/2 cup Fresca or relevant soda
1/2 cup crushed or cubed ice
2 Tbsp squeezed lemon juice
1-2 packets of sweetener (stevia)
1 oz white wine or a splash of tequila*


*alcohol optional, best made virgin

Directions:

A. Mix sweetener with the lemon juice 
B. Pour in glass together with wine/alcohol* 
C. Scoop in ice and slowly pour the soda to top
D. Garnish with frozen grapes or lemon wedges

Bento Express


I don't think there's ever a time when I'm not in the mood to eat sushi


Sushi is one of the most versatile foods, a sufficient 
alternative to any breakfast, lunch, dinner or snack


The Fuji Combo from Bento Express, purchased from Safeway


The Fuji Combo contains 10 pieces; 3 California Rolls, 3 Spicy
 California Rolls, 2 Shrimp Nigiri and 2 Smoked Salmon Nigiri


The California Rolls contain avocado, imitation crab, cucumber, 
mayonnaise, nori seaweed, white rice and black/white sesame seeds


And the Nigiri Rolls consist of packed cylinders of white
 rice topped with either smoked salmon or cooked shrimp


I don't use the soy sauce but I love eating the 
wasabi and pickled ginger slices with my sushi
