Gluten Free Carrot Cake

I had a massive craving for carrot cake yet was much too lazy to bother making
one from scratch, so I tried Heartland Gourmet's Gluten Free Carrot Cake Mix

Nutrition Facts. Using natural ingredients and a unique blend of brown
rice, potato and tapioca flours, I knew this brand was the right choose!

Naturally good

I have to admit, I rushed when I made this (HANGRY) and forgot to bang out
the air pockets before baking, so the cake didn't settle as well as it could have

All that's missing is icing!

I whipped up a cream cheese frosting I found
online because bloggers know their shit batter

It was so velvety and smooth, I was happy as a clam with how it turned out

The finished carrot cake

Crumbly because I literally took a spoonful-sized chunk out of
the bundt cake pan and shoveled it on a plate. Again, HANGRY!

10 out of 10 I would buy this brand again. Sweet but not
overly-so, and light, not rich. I'm drooling as I type this

The healthiest cake mix I've tried

How the rest of the slices turned out

Saving this piece for tonight!

Taco Night

Every night should be TACO NIGHT in my books...

Gluten Free Corn Tortillas are my go-to choice for taco shells

Corn tortillas, lean ground beef, mild salsa...

Shredded marble cheese, spicy refried beans, lettuce, tomato, and red onion

Stuff that taco good

Delicious

One of my favorite meals that, although a pain to prep, is well worth all the effort

Sorry for the lack of posts lately. Life has been getting in the way
of blogging but I promise there will be more yumminess to come!

Swiss Cheese Covered Crackers

This is what happens when you mix Swiss Cheese and BBQ Crispy Minis.
I was feeling a bit naughty and wanted a snack that went along with it!

Cracker Barrel Swiss Cheese Slices

Ooey gooey and crunchy all in one. The perfect combination for a guilty pleasure :)

Question: What was your last
guilty food craving you indulged in?

Chocolate and Marble Cake Party Platter

When it comes to entertaining, I rise to the occasion with cake

My parents were heading out to a party and my mom and
I took the liberty to put together a homemade party platter

The ensemble included my Triple Chocolate Fudge Bars, slices of my
mom's Marble Cake, Strawberries and The Laughing Cow Cheese Wedges

Served up and ready to hit the town ;)

I'm proud to say the plate came home empty and the desserts were highly enjoyed

This was a total Cheese and Chocolate lovers feast

Questions: Have you ever put a party platter
together? From veggies and dip to tarts and squares,
what are some of your favourite plates at a party?

Caramel, Cheddar, and Chocolate

I am in love with this new dessert/snack combination:
Cheddar and Caramel Popcorn with Chocolate and Almond

The popcorn is G.H. Cretor's Chicago Mix which is addictive as ****

The delicious chocolate bar

Endangered Species Milk Chocolate with Almonds

12 beautifully crafted squares

Just the right fuel I need to finish packing for my move to Calgary, Alberta tonight!

I love this chocolate bar for being rich and creamy, but not cloyingly sweet

And paired with the popcorn I must say, my taste buds are in heaven

Have a great weekend everyone!

Cheesy Announcement

I was going to say "hello my little chickens" but
I felt that may be inappropriate given the egg...

It's the end of the month and I am celebrating
with a little processed cheese, because why not!

Aside from the Velveeta Cheese, the rest of this
Cheesy Egg and Spinach Breakfast Sandwich is healthy

Poached egg with tomato, processed cheese
slice, and scrambled spinach with egg whites

Topped on toasted gluten free bread

Delicious and well worth it!

One of my favourite classic gluten free breads

EnerG Gluten-Free Enriched Brown Rice Loaf

Lastly I have a special announcement...

In a few weeks I will be moving back to Calgary, Alberta!!!
The adventures will continue just as they did here. So giddy-up ;)

Question: Do you eat processed cheese?
