Taco Night


Every night should be TACO NIGHT in my books...


Gluten Free Corn Tortillas are my go-to choice for taco shells


Corn tortillas, lean ground beef, mild salsa...


Shredded marble cheese, spicy refried beans, lettuce, tomato, and red onion


Stuff that taco good


Delicious


One of my favorite meals that, although a pain to prep, is well worth all the effort


Sorry for the lack of posts lately. Life has been getting in the way 
of blogging but I promise there will be more yumminess to come!

Spaghetti Dinner


My boyfriend's mother graciously sent us plenty of boxes of gluten free 
pasta so I've been cooking up spaghetti dinners for the past few nights 


Boiling the pasta


Chopping red bell pepper and broccoli with my six bean can of beans 


Blanching the veggies in the pasta water


Cooking the beef along with red onion and a 
few pepper pieces that found their way inside ;)


Adding Prego Original tomato sauce to finish


The finished plated product with the added beans


His and Her plates. My man opted for no beans and more meat ;)

Healthy Frozen Dinners


When I'm lazy in a pinch for time, healthy frozen dinners are essential


I decided to try President's Choice's Slow-Cooked Angus Beef Frozen Dinner Meal


Nutritionally speaking, only 200 calories each and 14 grams of protein


Angus beef chunks with celery, carrots, and whole cut potatoes


Not too shabby looking if I may say so...


But because I love to health-ify whats already healthy, I needed more veggies!


So I steamed up some frozen broccoli florets


Always getting my greens in ;)


In the microwave it went, for about 3-4 minutes

The final result


The product was a surprisingly succulent meal, with
a sauce that tasted as comforting as mother's pot roast


I highly recommend trying this brand if you
are able to find it in your area. Well worth $4!!!

Dempster's Gluten Zero


I think I found my new favorite Sandwich Bread


Dempster's Gluten Zero 100% whole grain gluten free bread


There are 2 kinds to choose from: 100% Whole Grain or White


(Per 2 slices) 140 calories, 3.5 g fat, 5 g fiber, 2 g sugar, and 3 g protein


Fairly simple ingredients, and dairy free!


Kitten likes the new bread too


A simple sandwich layered with spinach, 
ham slices, onion, mustard, and miracle whip
