Summer Salads and BBQ

My blogging friends, I am back on Vancouver Island and back to my
healthy gluten free living. I've been gone for too long and missed everyone
greatly. Food porn is in the works to make up for lost time. So enjoy!

Two healthy homemade salads to go with dinner

Caesar Salad with Gluten Free Croutons and Parmesan

Light and crisp

Organic Baby Potato Salad with Red Peppers

I used Miracle Whip because it's a tad healthier than full-fat mayonnaise ;)

Pork Chops smothered in Barbecue Sauce

Everything paired together

The perfect Summer meal to have shared amongst family!

Edamame Chicken Salad

I've been starting to enjoy the beginning of "salad season" by using
various ingredients to create different salads. Today I used Edamame

Earthbound Farm's Organic Half & Half (spring mix and spinach greens)

Chicken and Edamame Bean Salad

1 shredded chicken breast, 1/4 cup steamed edamame, 2-3 cups
salad greens, 1 small chopped tomato, and red and green bell pepper

The dressing was 2 tsp lemon juice, 2 tsp dijon
mustard, 1 Tbsp Italian dressing, and black pepper

Question: Have you been adding
any cool ingredients to your salads?

Frank's Red Hot Friday

My new obsession: Frank's Red Hot Sauce.
"I put that sh*t on everything!"

It makes me feel a little crazy, but cool like these shades.

Happy Friday loves!

The Coup Restaurant

Yesterday I met up with one of my best friends back
home who happened to be in Calgary this week visiting

Lounge, a popular vegetarian eatery on 17th Ave

The menu: Small Bites and Appetizers

Salads

The Coup is dedicated to providing customers with quality organic and
local food, all made from scratch. They compost, minimally use recycled
paper products, and features plenty of gluten-free and/or vegan options

We decided to share a couple dishes that our lovely waitress suggested for us

Starting with their full-sized Organic Rainbow Greens Salad

Shredded carrots, beets, pea shoots, rainbow greens
and seeds with a light Tomato, Leek & Herb Dressing

It was so refreshing and crisp

After tasting a couple different organic wines from their menu we
decided to order a glass of our favourites; Forbidden Fruit Pearsuasion
Dry White Wine for my friend and Castelmaure Red Wine for myself

Our shared entree was the Dragon Bowl with a Green Curry and Coconut Sauce

Steamed and fresh seasonal veggies with stir-fried tofu on quinoa,
topped with cilantro, seeds/nuts, with a Green Curry and Coconut Sauce

And after our incredibly scrumptious and healthy dinner, we
headed to the mall to take silly photo booth pictures together

Kane's Harley Diner

This weekend was full of fun with friends and good food; One
of the highlights was going for lunch at Kane's Harley Diner

Kane's is a unique restaurant/diner in Calgary,
themed to suit the Harley Davidson lover in all of us

Reece ordered the Veggie Burger with Onion Rings

I ordered the same Veggie Burger with a
Garden Salad and Raspberry Dressing on the side

Kris ordered one of their classic burgers with fries.
Yes, he likes to put fries on top of his burger...yum!

Kris' girlfriend, Dee, got their Grilled Cheese Sandwich with Fries

My Veggie Burger that is made with tempeh!

Quite energizing and filling, yet light enough to
leave you with room for afternoon ice cream :)
