Gluten Free Chocolate Walnut Praline Brownie


Made with Brown Rice Flour and topped with 
glazed Pecans and a decadent Caramel Sauce


I saved this bad boy for breakfast because, as you 
all know, I love my desserts in the morning!


Time to dig in...

Pumpkin Parfait


Normally when you think of Pumpkin, you think of Autumn...


But I still have 3 Farmer's Market Canned Pumpkin Purees
I bought back in late September that I need to use up!


I mixed the Pumpkin Puree with cinnamon, ground cloves, nutmeg, cardamom and 
stevia; Topped with Greek Yogurt and a warm crumbled Carob Chip Brownie Cookie


The warmed up brownie made the glass all foggy ;)



Question: I need help finding more uses for canned
pumpkin purees... any suggestions or recipe links?

Carob Chip Brownie Cookies


Who doesn't love Brownies and Cookies! Unfortunately, 
many people are still trying to stick to their New Years Resolutions, 
which means no brownies or cookies allowed... right?... WRONG!


Inspired by this post, I have concocted a super healthy recipe for 
sugar-free, gluten-free, high-protein, vegan brownie cookies :)


Carob Chip Brownie Cookies
Created by Snacking Squirrel

2/3 cup pure oats
1/3 cup carob powder
Few Drops stevia liquid (vanilla)
1/2 tsp baking powder
1/4 tsp baking soda
Dash cinnamon + nutmeg
Pinch sea salt


 Directions:
1. Preheat oven to 380 Fahrenheit 
2. Grind oats into flour using a food processor 
3. Mix dry and wet ingredients separately in 2 bowls
4. Add wet mix into dry, stirring briefly with spatula
5. Scoop 1/3 cup batter (per cookie) on a non-stick baking sheet
6. Bake for 20-25 minutes 


It's hard to gauge how much stevia to use. Generally it's enough sweetness to 
replace 1/3 cup - 1/2 cup plain sugar, or trial and error to find the right amount.


Each recipe makes 5 cookies; Each cookie is only 150 calories!


A perfect not-so-sinful indulgence for when you need a boost!
