Falling into Autumn

More than any season (even summer), I find I've been eating hot dogs like
crazy this Fall. Maybe it's just my way of preserving the summer nostalgia

Gluten free cheddar hot dogs with sauerkraut and the works, with a
side of sweet potato fries, maple baked beans, and crunchy kale salad

And I can't forget the pumpkin pie that has been disappearing quickly around here

And as lame as I feel this post is, it's my first in awhile. I've got a new Nikon
camera I want to start using with a micro lens and all, so you'll be seeing
more of that to come. I'm slowly starting to feel ready to open up more
about my mental health issues, my struggles, and my recovery

Question: What do you want to know about Snacking Squirrel.
Do you have any questions about me and my journey you'd love
for me to talk candidly about? Nothing is off limits

Love you all and miss you all immensely!

Dilly Chicken Salad Sandwich with Egg and Avocado

A fresh coast mouthful sure to curb any sandwich craving

Topped with my favorite, a runny organic free-range egg

I toasted up a slice of gluten free bread and layered on fresh organic baby
spinach, avocado, sauerkraut, dill-chicken salad with sliced red grapes, red onion,
tomato, and topped it off with an egg seasoned with black pepper and cayenne

Close-ups tell the whole story... Food porn at it's finest ;)

Definitely one of the best lunches I've made myself in
long time. So colorfully vibrant and equally nutritious!

Summer Salad Sandwich

The lazier I am the more creative I become...

This open-faced "breakfast" sandwich has everything I love

Gluten free bread topped with wild salmon salad, chickpeas, avocado, red pepper,
red onion, dill pickles, a poached egg, spinach, yellow mustard, and black pepper

Because hey, it's SUMMER and sometimes your mind does weird sh*t haha

Summer Salads and BBQ

My blogging friends, I am back on Vancouver Island and back to my
healthy gluten free living. I've been gone for too long and missed everyone
greatly. Food porn is in the works to make up for lost time. So enjoy!

Two healthy homemade salads to go with dinner

Caesar Salad with Gluten Free Croutons and Parmesan

Light and crisp

Organic Baby Potato Salad with Red Peppers

I used Miracle Whip because it's a tad healthier than full-fat mayonnaise ;)

Pork Chops smothered in Barbecue Sauce

Everything paired together

The perfect Summer meal to have shared amongst family!

Pizza Night

Splurging on the weekend with pizza & movies feels like a natural thing to do.
We ordered in from Boston Pizza. My boyfriend got a Small Pepperoni Pizza...

And I got a large Santa Fe Salad with Chicken Breast

Now, back to relaxing. Tomorrow will be Eggs & Bacon and
plenty of time spent doing nothing, and loving every bit of it!

Deli Chicken Salad Sandwich

Lunch break after hours spent house cleaning and working up an appetite

Safeway Deli's Chicken Salad Salad

Creamy and delightful

I only splurge and buy some the odd time. A small container costs six dollars!

I toasted some gluten free bread and layered
on kale and a heaping spoonful of chicken salad

Such a balanced and filling meal

Questions: Do you ever buy foods from the deli?
Do you treat yourself to expensive items occasionally?

Homemade Egg Salad Sandwich

Going old school with the traditional Egg Salad Sandwich

2 hard boiled eggs with Miracle Whip, onion, salt, and pepper

Nothing special about it but it's an often
overlooked dish that we remember at picnics

Paired with kale and gluten free toast

Was it ever good though! Highly satisfying and
was worth pre-boiling eggs early in the morning

Question: When was the last time you had egg salad?
