Taco Night


Every night should be TACO NIGHT in my books...


Gluten Free Corn Tortillas are my go-to choice for taco shells


Corn tortillas, lean ground beef, mild salsa...


Shredded marble cheese, spicy refried beans, lettuce, tomato, and red onion


Stuff that taco good


Delicious


One of my favorite meals that, although a pain to prep, is well worth all the effort


Sorry for the lack of posts lately. Life has been getting in the way 
of blogging but I promise there will be more yumminess to come!

BBQ Bacon Wrapped Turkey


Here are some photos of our Christmas Dinner. I feel like I have the 
"Post Holiday Eating Blues', already excited for the next holiday season


Almond Soy Asparagus, Mashed Potatoes, Gravy, Stuffing, Corn, and Cheesy Rolls/Buns


But the real star was the BBQ Bacon Wrapped Turkey


Cooked on the barbecue too!!! BBQ turkey is fantastic

I thought I'd add this sign I saw while I was out for a

Steak and Potatoes


I won't deny that I'm a meat and potatoes kind of girl


And even though I ate a more plant-based diet when I first began 
blogging here, I slowly transitioned back to my omnivorous roots


Roasted russet potato wedges seasoned with extra 
virgin olive oil, sage, chili powder, salt and pepper


Buttered corn on the cob


Lightly sprinkled with salt and pepper


4 oz sirloin steak, cooked medium-well, and garnished 
with chopped red onion, chili powder, salt and pepper


Finished with steamed broccoli spears


Questions: Do you classify yourself as a meat
 and potatoes person too? If not, which two foods 
would you consider staples on your dinner plate?

Chocolate Cowboy


A hearty dinner fit for any cowboy or cowgirl 


2 baked potatoes lovingly smothered in olive oil 
and seasoned with freshly ground salt and pepper


Herb rubbed chicken breast


Chili powder, cayenne, sage, garlic powder, salt, pepper and sliced red onion


Corn on the cob with butter, more salt and pepper


With steamed broccoli on the side


And the best part was dessert...


I found these adorable white chocolate cowboy hats
at Lewis Chocolate & Candies in Bankers Hall, Calgary


They had milk and dark chocolate hats too, each neatly wrapped
 in cellophane and twine, sporting a decorative star in the front :)

Warm Yoga and Warm Meals


The other day I was feeling a little down and needed to 
find something to do to pick me back up... so I headed
 downtown at noon for a drop-in yoga class at Yoga Passage


A 55 minute Warm Yin/Yang Yoga Class


The class starts out with Yang (active) sequences followed by
 (restorative) Yin sequences, all done in a slightly heated room


The studio inside is quite simple and serene, 
with candles lit all along the walls and floor


Props: Bolster, blocks and yoga mat


The class was incredibly relaxing with just the right amount of 
challenging postures that flowed together in coherent sequences


And after a balanced yoga session comes a balanced dinner


Oven roasted salmon, potatoes, corn on the cob and steamed broccoli


The perfect summer meal


And it tastes even better when you have someone to share it with :)

Delicious Deli Salads and Meals


Thanks to the wonderful array of healthy deli foods at 
Sunterra Market, it's easy to find an excuse not to cook


Sweet Chili Roasted Tofu & Peppers


Ingredients: Tofu, sweet chili sauce, garlic, sesame oil, sesame 
seeds, canola/olive oil, bell peppers, onion, paprika, herbs, spices, salt


Quinoa & Apple Salad


Ingredients: Organic quinoa, apples, corn, bell peppers, 
onions, sunflower seeds, canola/olive oil, lemon, white wine
 vinegardried cranberries, chili flakes, garlic, fresh mint, salt


Herb Roasted Turkey Breasts


Ingredients: Fresh turkey breasts, fresh oregano
fresh rosemary, fresh thyme, canola oil & spices
