Summer Salads and BBQ


My blogging friends, I am back on Vancouver Island and back to my 
healthy gluten free living. I've been gone for too long and missed everyone
 greatly. Food porn is in the works to make up for lost time. So enjoy!


Two healthy homemade salads to go with dinner


Caesar Salad with Gluten Free Croutons and Parmesan

I used Miracle Whip because it's a tad healthier than full-fat mayonnaise ;)


Pork Chops smothered in Barbecue Sauce


Everything paired together


The perfect Summer meal to have shared amongst family!

Mom's Chicken Dinner


Don't you love having a homecooked meal?


Roasted Chicken Dinner


Tender chicken breast with my mom's "secret" herb rub


With all the fixings :)


Roasted potatoes and asparagus with red onion


So tender and savory




Gotta have gravy with my chicken


Then came the cranberry sauce dilemma...


My mom had to improvise opening the can with a knife since our can opener broke


Thankfully it worked and mom saved the day dinner!

Healthy Frozen Dinners


When I'm lazy in a pinch for time, healthy frozen dinners are essential


I decided to try President's Choice's Slow-Cooked Angus Beef Frozen Dinner Meal


Nutritionally speaking, only 200 calories each and 14 grams of protein


Angus beef chunks with celery, carrots, and whole cut potatoes


Not too shabby looking if I may say so...


But because I love to health-ify whats already healthy, I needed more veggies!


So I steamed up some frozen broccoli florets


Always getting my greens in ;)


In the microwave it went, for about 3-4 minutes

The final result


The product was a surprisingly succulent meal, with
a sauce that tasted as comforting as mother's pot roast


I highly recommend trying this brand if you
are able to find it in your area. Well worth $4!!!

BBQ Bacon Wrapped Turkey


Here are some photos of our Christmas Dinner. I feel like I have the 
"Post Holiday Eating Blues', already excited for the next holiday season


Almond Soy Asparagus, Mashed Potatoes, Gravy, Stuffing, Corn, and Cheesy Rolls/Buns


But the real star was the BBQ Bacon Wrapped Turkey


Cooked on the barbecue too!!! BBQ turkey is fantastic

Breakfast and Coronas


Normally I don't put this much effort into my breakfast


...but thankfully I did!


Scrambled eggs and oven roasted potatoes/sweet potatoes, and salsa


It took about 40 minutes, enough time to 
make a coffee and catch up on some reading


It's a little superfluous adding so many pictures of one meal, 
but as you remember here, it just goes with the territory


And finally, I did what every recently graduated student would do...
