Summer Salad Sandwich


The lazier I am the more creative I become...


This open-faced "breakfast" sandwich has everything I love


Gluten free bread topped with wild salmon salad, chickpeas, avocado, red pepper, 
red onion, dill pickles, a poached egg, spinach, yellow mustard, and black pepper


Because hey, it's SUMMER and sometimes your mind does weird sh*t haha

Protein Packed Meals


Some days are spent eating mostly carbs and others are protein packed.
 Today I just needed the extra boost only protein-rich meals can provide


They say eggs are an excellent choice for breakfast, so I attempted to make an omelet


By attempted, I mean failed and thus my omelet became an egg scramble


Still yummy nonetheless. I used a whole egg, 
egg whites, spinach and onion with black pepper

So I made an open-faced sandwich with gluten free toast, lettuce, and salmon salad


I always struggle with not eating the whole container of salmon, its just that good


So now that we are on the subject of protein, it leads me to wonder...


Questions: Do you alternate between higher
 carb and higher protein days? Do you find that
 some days you just need protein-rich foods?

Toasty Sunshine and Salmon on Toast


Take a moment just to "stop and smell the flowers", 
which is exactly what I did on this beautiful Spring day

My most enjoyable meal of the day was this Salmon Salad on Toast


I've been enjoying salmon a lot lately as it's one of 
my favorite deli items from Planet Organic Market


Plus salmon on toast with a little fresh kale 
just makes for the perfect lunch with no fuss


And you get your daily dose of Omega 3's in

I ate about half of it because the portions were HUGE


Now to sidetrack myself to a different subject...Quitting smoking.
 I have been smoke free for over a few months now and have been 
mostly using an e-cigarette/vaporizor to do so. But I ordered these 
Habitrol patches a couple days ago because they helped in the past


Last summer when I used to smoke. Yes my gasp explains it
 all!!! I am so glad to be smoking-free and my lungs are much
 happier too. It's such a terrible habit and one thats hard to break


So far, Habitrol patches have been helping me
 continue stay tobacco-free, so thats good news :)

Salmon Salad for Breakfast


There's nothing wrong with wanting to get your omega 3's in before noon


So I had Planet Organic's Wild Salmon Salad on top of gluten free 
bread for breakfast, and it was delicious! Just what my body needed :)

Monkeying Around


I love sushi for breakfast, it comes in second to chocolate :)


Brown Rice Vegetable Combo with Imitation Crab Lettuce Wraps in Tapioca 
Paper, alongside Roasted Chicken Breast, Sauteed Kale, Red Onion, and Leeks

My lunch looks more like it should have been my 
breakfast, but who says we should follow the "rules"


Scrambled Tortilla with whole eggs and egg whites, kale
 and onion, a dash of garlic powder and squirt of mustard


Oh and tomato, all tucked tucked into a brown rice tortilla


Mighty delicious and so simple, just how I like my meals


Let's switch over to dessert shall we?


Dessert for Dinner? I think so!


And inside an empty bowl of noodle soup? Yup!


A cup (I ate some while photographing) of Soy Ice Cream 
with Gluten Free Chocolate Fudge Cake and Vanilla Cake


Definitely not Soybean Noodle Soup, but way tastier ;)
