Cheesy Vegan Enchiladas

Green Cuisine Muffin with Chocolate Chips and Goji Berries


I really do wish everyone had a Green Cuisine nearby! Guess
 you will just have to come visit me to enjoy all the yummies :) 


Also from Green Cuisine, which I seem to be going 
to more often than usual lately, Pinto Enchiladas!!!


Vegan Cheesy Pinto Bean Enchiladas


This was AMAZING! I loaded the bottom with jambalaya
Jamaican rice and added some lettuce and kale. On top is 
a vegan enchilada with veggie meat, soy cheese, and salsa!


And if that wasn't yummy enough, I snacked on a Cool Mint Chocolate Clif Bar. 
It was another flavor that was recommended to me and I was so excited to try it


Less sweet than the Maple Nut with cool bursts of minty freshness.
 But why am I telling you this ? Most of you already love this bar...


After I soak up some sunshine, i'm off to yoga!
hmm I guess i'm starting to warm up to Wednesdays...


Question: Let's have a Clif Bar Debate: Which 
flavor is the best? Sorry, you can only pick one :)

That enchilada meal looks so good. I'm craving something like that for dinner tonight - cheesy and a bit greasy, like grilled cheese or a quesadilla or egg sandwich.

I can't eat Clif Bars cause I'm allergic to soy, and that's one of their main ingredients. Sad.

Green Cuisine just keeps looking better and better! If I am ever out in BC, I am making you take me there haha!

I'm allergic to Clif bars but I really want to try making them with Danielle's recipe from Runs on Green! :D

I haven't had a clif bar in a while but I like oatmeal raisin walnut the most I think...it really has been too long but I usually only grabbed them during cross country season when I was always having to eat a lot more in college and high school. Yes, green cuisine is where I wanna go!

I think I'm going to have to sit this debate out and watch from the sidelines. I can't eat any Clif bars because they all "may contain traces of peanuts" and I've been blessed with a wonderful peanut allergy :) but the oatmeal raisin walnut one sounds pretty good...

I haven't tried that flavor. I'm not a big mint person though. My fave flavors have been the cranberry seasonal one (can't remember the entire long name), the macadamia nut, and carrot cake. I'm apparently a fan huh? Hope you enjoy your yoga!!

Believe me, I wish I had a Green Cuisine too! You know how jealous I am of you. :P

That enchilada looks soooo flippin good! I love how you realize that meat doesn't have to play a part in every meal. So many people forget that and eat meat 3+ times a day. It's cool to see a non-vegetarian appreciate other food and protein sources besides meat. :)

I wish I had a Green Cuisine nearby, too! The past two goodies you've posted from there sound and look fabulous!
And I've never had a Clif Bar!! Shocker, I know - I've got some in the "bar stash," though. They'll be gotten to eventually.

OK so I'm afraid to say that I've never had a Clif bar before, but my colleague at work just bought a box of 24 Chocolate Mint Clif bars because she heard they were going to discontinue them or something, and that's the only flavour her and her son enjoy. So based on my limited knowledge, and vicarious experience, I vote Chocolate Mint for best flavour. :D

I love your new site layout! The touch of blue is very pretty and I think it's great to have your "pages" at the top so that they are more noticeable to newcomers.

I wish I had Green Cuisine near me too...but I know I'll come to Victoria some day when I have time and money. Have you ever been to Rebar? It's a semi vegan restaurant. I have their cookbook. My grandparents got it for me when they were on vacay in Victoria.

As for Clif bars...I've never had one so I can't participate in this. Anything with mint and chocolate sounds pretty delicious to me though..

Oh my gosh girl only one?? I'm just going to go with what first popped into my head.. the carrot cake! :D

That lunch looks delicious :D I love Jambalaya. I made a vegan version for people at a campaign office once and I knew they were in for a treat--a spicy one mwahaha! It wasn't too spicy though ;)

And I guess I will have to just make my way up north! I always love the look of those muffins and I know that they must be scrumptious!

Blueberry Clif bar ROCKS. Not normally something id pick..but as blueberry products go, it's awesome. Choc is so over done, it's hard to find a good bloob bar. This one delivers!

I love that tea. SO soothing. The green tea and ginger from TAZO is another favorite. Favorite Cliff bar...hmmm....I'd say banana nut or Apricot, depending on my mood.

Such a tough question! My favorite Clif Bar changes from week to week. Right now I guess I'd have to say the Peanut Toffee Buzz. But if you asked me last week, I might've said Maple Nut...or blueberry...

i've never tried a cliff bar before! SHOCK. but i'd love to....so i think out of the flavours available the ones that appeal most to me would be...the chocolate brownie, maple nut, banana nut bread and crunchy peanut butter..oh oh oh and the ginger bread one!

those enchilladas do look absolutely amzing!!!! x

I don't have a favorite Cliff bar yet because I never seem to get around to eating them. Whenever I have to pick a bar the Oskri ones always win. Always. The Chocolate Chip Peanut Butter one is pretty fabulous though! Especially heated up in the microwave for a few seconds.. yum.
