Breakfast Berry Oat Parfait

If you haven't already, you NEED to make one!


Breakfast Berry Oat Parfait
inspired by Everyday Foodie


Overnight Oats Layer:
1/3 cup quick oats
2/3 cup almond milk

Directions: Mix together and refrigerate overnight.

Berry Softserve Layer:
1/2 cup frozen blackberries
1/4 cup frozen raspberries
1 frozen banana
1/4 cup almond milk

Directions: Blend in blender, add water if needed.
Layer the overnight oats and softserve in a cup.

Ooo that parfait looks divine. I've never been a big fan of chia seeds, and I usually make my overnight oats with yogurt instead, but maybe I need to give the little buggers a shot again... especially with school coming up; it'll be nice to have a breakfast ready-made and not involving yogurt.

I love to make my smoothies really thick and still kind of frozen, and then to eat them with a spoon. Pure deliciousness. I may have to make one for dessert tonight. Once a day is just not enough.

You make me miss vegan overnight oats (I'm on a hot oat kick right now), especially because I LOVE making soft serve with lots of fruit. And those shoes are absolutely gorgeous! May I ask where you got them?

That soft serve looks amazing! I've been making banana soft serve without a food processor or mixer... it's probably more like frozen baby food. I will definitely be making this as soon as I get moved in!
