Chickpea Chicken Salad with Curry Mustard Dressing


Summer wouldn't be official without a giant healthy salad


Just like my previous "Colour-Me-Happy Salad", this Chicken, Avocado, and 
Chickpea Salad has lots of fresh colourful vegetables rich in vitamins and minerals


In this bowl is 3 cups leafy green lettuce and 2 cups spring mix greens, 3/4 cup
 canned chickpeas1/2 grilled chicken breast, 1/4 mashed avocado, 1 sliced tomato,   
1/2 sliced cucumber, 1/4 cup diced red onion, and broccoli sprouts


All that's missing is a light and flavourful dressing


Curry Mustard Dressing


1 Tbsp lemon juice, 1/2 Tbsp apple cider vinegar, 2 tsp yellow mustard, 2 tsp dried 
parsley or basil (or 1 Tbsp fresh parsley or basil) 1-2 tsp curry powder, 1/4 tsp paprika
1/4 tsp cayenne pepper, pinch of black pepper and salt, and a dash of stevia to sweeten


Then pour over salad, mix, and serve

Mmm I've been eating a ton of chickpeas lately- making random hummus variations mostly though. I haven't had them on a salad in awihle! I like the curry mustard combo :0

Yum! I love big salads in the summertime (minus the chicken). :)

That one looks great, and I really need to get better about adding curry powder to recipes. Have you ever had curried egg salad? Delicious.

Big salads just speak summer, don't they? My latest favorite is romaine topped with lima beans, black sesame seeds, hemp seeds, something pickled, and doused in balsamic vinegar and tamari soy sauce :)

Love this dressing idea! I'm always making my own dressings, but I've never tried one with curry powder and mustard in it. It sounds fabulous!
