Color Me Happy Salad

"We don't need a melting pot in this country, folks. We need a salad bowl.
In a salad bowl, you put in the different things. You want the vegetables - the
lettuce, the cucumbers, the onions, the green peppers - to maintain their identity.
You appreciate differences-Jane Elliot

Question: Do you still eat
 salads in the winter months?

oh delicious! I love adding squash, brussel sprouts, sweet potato to my salads during the winter. COLORFUL! ;)

i try to eat salads in the winter but they don't seem to satisfy me. it is so freaking cold in MN so my body craves warm and warming foods. so ready for spring.

yumm~ salads are good any time of the year! I usually add some sort of cooked veg anyway, the more textures the better. Some of my fave additions are purple onion, roasted capsicum and green beans

My favorite salad ever has mixed greens, chickpeas, avocado, carrots, cucumber, tamari roasted almonds, dried canberries and an asian ginger dressing. YUM. I could eat this every day! In the winter I definitely crave more grounding foods like root veggies, soups and stews, but I still get in the mood for a salad every once in a while. You're toes look very excited about that salad! :)

Anonymous said... [reply]

still do! crave them more in the summer though. still manage to eat one every day though :)

yum that looks amazing and so colorful! i still eat a salad every day! sometimes it's cold and sometimes it's a wilted one like steamed collards or kale.

I do, but lately I have been eating "hot salads". I like salads filled with steamed veggies since I get so cold. I love that you eat large salads...me too!

Love salads in ALL months!

Amy B @ Second City Randomness said... [reply]

I will eat salad all year long... I know it's not the most seasonal thing, but I love it too much!

And I like that quote. My mom used to use it in our social studies classes in high school (she was a teacher- and yes, she was MY teacher...)

I definitely do NOT continue to eat salads in the winter. I want to and I try my hardest but... I just don't crave them. At all. My body is all about the chili's, soups and stews.. which I'm totally fine with. Oh, and the cookies. My body craves those too.. ;)

I hope you're doing okay, Kelsey! Your realization about why you may crave sweet potatoes so much has me wondering if that's why I crave them like crazy too. Hmm..

Emily said... [reply]

It definitely does look like a happy salad. :) I don't eat salads as much, but I still eat them in the winter. I crave fresh vegetables, no matter what the season. :)

k said... [reply]

I do - they are like a taste of summer :) Thanks for your comment while I was away - I'm so excited to be back home and back to blogging and your blog! :)

Love that quote! I love salads, and eat them year-round, however when it's cold out, I'll often make a warm salad by briefly sauteeing kale (or another sturdy green). It creates a different texture AND warms you up!

I love salads!!! But u see, BC weather isn't quite the weather for salads recently...lol I crave more soups these days

Anonymous said... [reply]

WOW! I'm going to come over and steal your salad... k?

Jes said... [reply]

I love salads year round... of course I live in Florida where it is usually pretty warm year round.

Anonymous said... [reply]

I like to eat salad year round, but not as meals as often in the winter. My body loves warmer foods this time of year!

Krista said... [reply]

Kelsey, that salad looks amazing! And I do eat salads in the winter, but not near as much as in the summer...

Anonymous said... [reply]

Does the sun still rise in the winter months?!... I eat a salad nearly every day of the year.

sara said... [reply]

i'm not a big salad eater really. but next time i make one, i'll put giant chunks of avocado in it, because that looks so good! :)

Anonymous said... [reply]

I eat salads whenever I want. So the answer is yes :)

Nicole, RD said... [reply]

YUM! Absolutely - LOVE salads any time! And is it just me, or does avocado make just about anything better?

Sarah B @ Bake + Bike said... [reply]

That looks wonderful! I really enjoy the salad bowl analogy.

I have NOT been eating a lot of salads this winter but I should start! They are so delicious AND visually appealing :)

Your salad looks super tasty...it might change my mind about salads during the winter! Usually, I stay away from them, but yours looks chock-full of yummy goodness. I would have a hard time saying no!

Anonymous said... [reply]

As a matter of fact, I just devoured a salad as big as yours! :P I love salads in the winter! You should try adding spaghetti squash, it makes it super fun to eat :)

Jamie @ Food in Real Life said... [reply]

That is a beautiful salad! I do eat salad in the winter months, maybe a little less since we have a garden in the summer and always stuff to use up.

Sonia said... [reply]

Yes! I ate a salad last night, and posted about it- I usually don't crave it as much but I incorporated warm brown rice and beans into it so it was fabulous!

Carrie (Carrie on Vegan) said... [reply]

Salads are good at any time of year! And, at any time of day. :) Yours looks so delicious. Are you feeling better? I hope so.

Kayla said... [reply]

I love eating salads, no matter what! I'm just about to make one right now! Your looks great, love the chickpeas!

Mary said... [reply]

Now THAT'S a salad!!! I've aqctually never really been into salads until this year- they use to make my hungrier rather than fill me up no matter what was in them. But yes, now that I've started eating them, it doesnt matter what the weather's like outside!

Lisa (bakebikeblog) said... [reply]

I love sprouts in salad! YUMMO!

Anonymous said... [reply]

now that is what i call one rocking salad girl!! so colorful and has delicious veggies. wish I could say i ate more of them in the winter :\

Kenzie @ A Healthy Purpose said... [reply]

that is a damn happy salad!

and, as you could prob. guess. i eat salad year round.

Chelsea said... [reply]

That is practically my ideal salad! I love avocado and chickpeas and sprouts in mine!

And heck yes I still eat salads in the winter months. Especially ones with warm roasted root veggies in them. It makes them feel more wintery. ;)

Red Deception said... [reply]

I don't like salads as it is! To me it's boring and cold. I like warm, creamy, crunchy things :)

Kelsey @ Clean Teen Kelsey said... [reply]

Ahh! That looks so wonderful! I love the last picture with your little toes, hahah. Salads are amazing. I don't have a favorite combo; I just throw in whatever the heck sounds good at the moment. :)

Tatianna said... [reply]

I've been eating salads every day since I moved into school... because the salad bar here is amazing! There are so many toppings with tons of beans and protein/carb/fat options. I love loaded salads!

Missy said... [reply]

I do eat saleads but so much less..which is quite a victory because there was a time...okay YEARS when they were all I ate. Thats it. Ends there. So now I appreciate my body is having me eat more heartily in the winter even though I live in South Florida.
We've been having 80 to 90 degree weather. (0:

absolutely! i love the avocado in the picture too. I've been at college for a year and a half now and miss only one thing besides my family while i'm away: smokey, delicious avocado. I'm having withdrawals!
