Color Me Happy Salad

i try to eat salads in the winter but they don't seem to satisfy me. it is so freaking cold in MN so my body craves warm and warming foods. so ready for spring.

yumm~ salads are good any time of the year! I usually add some sort of cooked veg anyway, the more textures the better. Some of my fave additions are purple onion, roasted capsicum and green beans

My favorite salad ever has mixed greens, chickpeas, avocado, carrots, cucumber, tamari roasted almonds, dried canberries and an asian ginger dressing. YUM. I could eat this every day! In the winter I definitely crave more grounding foods like root veggies, soups and stews, but I still get in the mood for a salad every once in a while. You're toes look very excited about that salad! :)

yum that looks amazing and so colorful! i still eat a salad every day! sometimes it's cold and sometimes it's a wilted one like steamed collards or kale.

I do, but lately I have been eating "hot salads". I like salads filled with steamed veggies since I get so cold. I love that you eat large salads...me too!

I will eat salad all year long... I know it's not the most seasonal thing, but I love it too much!

I definitely do NOT continue to eat salads in the winter. I want to and I try my hardest but... I just don't crave them. At all. My body is all about the chili's, soups and stews.. which I'm totally fine with. Oh, and the cookies. My body craves those too.. ;)

I hope you're doing okay, Kelsey! Your realization about why you may crave sweet potatoes so much has me wondering if that's why I crave them like crazy too. Hmm..

It definitely does look like a happy salad. :) I don't eat salads as much, but I still eat them in the winter. I crave fresh vegetables, no matter what the season. :)

Love that quote! I love salads, and eat them year-round, however when it's cold out, I'll often make a warm salad by briefly sauteeing kale (or another sturdy green). It creates a different texture AND warms you up!

Yes! I ate a salad last night, and posted about it- I usually don't crave it as much but I incorporated warm brown rice and beans into it so it was fabulous!

Now THAT'S a salad!!! I've aqctually never really been into salads until this year- they use to make my hungrier rather than fill me up no matter what was in them. But yes, now that I've started eating them, it doesnt matter what the weather's like outside!

That is practically my ideal salad! I love avocado and chickpeas and sprouts in mine!

And heck yes I still eat salads in the winter months. Especially ones with warm roasted root veggies in them. It makes them feel more wintery. ;)

I've been eating salads every day since I moved into school... because the salad bar here is amazing! There are so many toppings with tons of beans and protein/carb/fat options. I love loaded salads!

I do eat saleads but so much less..which is quite a victory because there was a time...okay YEARS when they were all I ate. Thats it. Ends there. So now I appreciate my body is having me eat more heartily in the winter even though I live in South Florida.

absolutely! i love the avocado in the picture too. I've been at college for a year and a half now and miss only one thing besides my family while i'm away: smokey, delicious avocado. I'm having withdrawals!
