Pumpkin Millet Crackers

Pumpkin Millet Crackers
created by Snacking Squirrel

1/2 cup cooked millet
1 large beaten egg
2 Tbsp pumpkin seeds
2 Tbsp flax seeds
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp sea salt
1/2 cup water
1 Tbsp lemon juice
1-2 tsp mustard
Dash basil + thyme
Pinch black pepper

Directions:
1. Preheat oven to 365 Fahrenheit
2. Mix dry and wet ingredients separately in two bowls, then combine together
3. Place dough between two pieces of parchment paper or baking sheets
4. Using a rolling pin, spread and flatten dough as thin as you like your crackers
5. Gently remove the top layer of parchment paper
6. Cut vertical and horizontal lines along dough with pizza cutter or knife
7. Bake for 20-25 minutes until golden brown
8. Slowly pull apart your crackers from each other

I highly suggest sitting on it... seriously, my arms were getting sore from rolling haha

Mine weren't as pretty as i'd like them to be but they taste fantastic!

They go great with the Spinach Hummus and can easily be
adapted to add in your favorite ingredients and seasonings :)

  9. I have never made my own crackers because I DONT OWN A ROLLING PIN. That is literally the only reason why. It keeps me from baking so much - pie crusts, crackers, flatbreads!
