Spinach Hummus Dip


It wouldn't be fair to make Spinach Hummus and 
Gluten Free Crackers without sharing the recipe!


Spinach Hummus Dip
created by Snacking Squirrel

2 cups fresh spinach
1 can rinsed chickpeas
2 cloves garlic
1/4 cup lemon juice
1/8 cup tahini
1/8 cup water
Dash paprika + cumin
Dash salt + pepper


Directions:
1. Blend everything together in a food processor until well combined
2. Add extra water to the mixture if it becomes too thick to blend 
3. Spoon into dish, refrigerate, and serve with crackers or pita bread


Tomorrow i'll post the recipe for these homemade 
gluten free pumpkin millet seed crackers :)

Hummus looks great, but I am especially looking forward to the cracker recipe!!! Oh boy oh boy!!! Pumpkin and millet? I am going to be in heaven!

I was going to ask before reaching the end: "what are those crackers?" Can't wait til you post that recipe. The only time I added spinach to guacamole was when I got my wisdom teeth out and couldn't chew my salads. Who knew I was onto something!
