Working For The Weekend?


Because there's no better way to end a stressful & busy week than 
working weekends on top of spending 6 hours on a Sunday 
cooped up in a room for CPR-C/First Aid Training


And as always, I'm the first person to arrive :)


Don't laugh! I'm tired, bored and completely out-of-it...



After a Clif Builder Bar, Banana and 6 hours later, the week was finally over! 
So I kicked my feet up and enjoyed a nice home cooked Dinner...


Bison Baked Sweet Potato with lean bison, kale, tomato, onion, salsa and black pepper


This would taste really good with tempeh or tofu too :)


But alas it's Monday, and back to a regular working week.... sigh

I baked my butt off this weekend and enjoyed time with my boys while my husband was away for work all weekend. That sweet potato looks amazing! I hope you have a great week!

my grad school classes are both saturday and sunday 8-5.. so i feel your pain! when sunday evening comes around i cant finally relax. and then start the work week monday!

Oh, that is one packed yummy looking potato. sorry you had to attend a boring class on a Sunday. That's poop. But it's done now - yay! I worked yesterday for about 2 hours and spent the rest of the day feeling sorry for myself. LOL Yeah, it was a rainy day.

I've had to do that training in the past and it just stressed me out thinking what I would have to do in an emergency. Kudos to you for getting it over with. I played with my new juicer this weekend!

haha...i'm always the first to arrive too. i'm terrified of being late. :p my weekend was pretty tame, had date night with the hubby and caught up with friends. your dinner looks delish, btw! i think i'd try it with tofu. ;)

Mmmmmmmmmmm, looks very good! What was the first aid course for? Driving lessons?

M weekend was quite relaxed. Met and friend on Saturday and spent most of my day at home on Sunday, writing on my thesis and practicing the piano. And I went for a run, finally! :D

I was racing my half marathon on Sunday and ended up so tired by the evening I had a giant green smoothie for dinner. It was delicious though and I probably used about 100g of PB in it ;)

I wish I had one of your sweet potatoes though! I can thick of so many great toppings for them...one for every day of the week pretty much.

Congrats for surviving such a long training session! I have a terrible attention span and would be going stir-crazy after six hours.

And when I trained I always shuddered at the thought of "Don't worry if you crack the sternum."

Best take-away? "YOU. NO, YOU. Go call 911" rather than "Someone call 911"

I love your stuffed taters! And good luck with First Aid, I had to take that class one quarter and um...I have forgotten most everything. Except CPR and the heimlich, I do vaguely have an idea of what to do!

I just made myself an identical dinner! But with tofu noodles instead of the sweet potato. The sweet potato definitely takes it a step further though and now I'm jealous!
I feel that we may have a lot in common... I have recently gone gluten-free as well, hoping that it would alleviate stomach, mood, energy issues as well. Good luck with your experimenting!

Aww I've had to spend weekends cooped up doing first aid stuff too! It's brutal! Mine actually expired though so I have to take it again soon... I just don't want to spend another weekend doing it! :P

This weekend I went on a date and had a foodie adventure with my friend!

Aw cutie haha look at you bright and early at the First Aid training session! We just did a CPR certify session in dental school (kind of a cop out session for us.. only lasted an hours - haha please don't be too jealous! 6 hours sounds brutal!) but you made it! And I hope you enjoyed your weekend! Your food is looking amazing as always. I am SO going to be a better blogger from here on out, and I have been keeping up with yours!

This weekend, I FINALLY had a weekend without 24/7 studying and it was AMAZING! I did nothing special and it felt great :) I have ventured into trying almond milk and putting some foods back into my diet - so it was a pretty successful weekend :)
