Pita Pockets and Paradise


Olafson's 100% Whole Wheat Pita Wraps


I was going to cut it in half but decided to leave a little opening, 
and stuff the Pita Pocket with Scrambled Eggs, and Squash!


Mixed together 1 whole egg, 1/3 cup egg whites, 1 cup spinach, 3/4 cup leftover 
oven roasted kabocha squash, 1/3 cup onion, and 1 tsp yellow + brown mustard


Then stuffed it all inside the pita bread


Last night we drove My Brother and his Girlfriend to the BC Ferry Terminal... 


They're headed over to Vancouver to catch a flight out to Cancun!


That's right, they're vacationing in Mexico for a week 
...during my Birthday, without taking me with them! lol :(

That always happens to me! people vaycay on my bday and then forget to even call or text to say hello to me! If I was closer i'd come partay with ya!!!!!

Oooh...why aren't you going with them? You deserve some fabulous time in Mexico, too; you should at least come to Vancouver or head to the States!

I think we both need a trip to Mexico. I could sure use some relaxation/recovery time. Your pita looks too tasty, my dear. Thanks for sharing this with me tonight.
