Go Big or Go Home


"Go Big or Go Home" they say, so I brought the big home


I found these two jumbo Kabocha Squashes 
after digging to the bottom of the Squash Barrel


Unfortunately the camera doesn't capture just how large each squash is


Cut in half; the view inside


One whole squash cut into cubes and tossed 
into a roasting pan lined with parchment paper


Tucked underneath the squash is an assortment of green vegetables 
(see last photo), and roasted in the oven for 1 hour at 400 Fahrenheit


Eden Organic Yellow Mustard and Western Family Spicy Brown Mustard


I love using different mustard varieties as "dressings" for my meals


After baking, I squeeze liberal amounts of 
mustard over top of the steaming hot squash


Oh! I forgot to mention that before going in the oven, I seasoned the squash with
 Sage, Thyme, Ground Rosemary, Cayenne Pepper, Garlic Powder and Cinnamon


The vegetables underneath included Brussels 
Sprouts, Kale, Broccoli, Spinach and Red Onion

I am an equal opportunist when it comes to mustard! I love them all. I never think to mix them and I need to try after seeing what you do with them! It looks so good!

... I don't like mustard, however... the more I experiment with it I'm beginning to acquire a taste for it. So far I've really bend fond of wasabi mustard and i Korea I was able to find pineapple mustard (anything with pineapple to me is a weakness so). Does maple syrup count as a condiment? I'm really not a condiment person :|

But yours definitely looks delish!

I finally found some Kabocha yesterday and I think I'll turn orange eating them all, though none were monster squash ;)

I wish I could eat the skin on them - you must have an amazing stomach to digest all of that fibre - I can't imagine eating the squash, skin, broccoli kale etc!

I love mustard! It is a must for my sandwiches! I've never tried using it on squash though. I bet I'd like it. :D

I like mustard ... especially Dijon, or the grainy stuff. I love all condiments, but soy sauce or Sriarcha are probably my faves.

When it comes to roasted root veg? You go that in the bag.

I like mustard....when it comes to consiments I go in stages. One week ketchup, the next salsa...

My favorite condiment of all time is nutritional yeast. I am amazed that you seem to never use it!

Those Kabochas are huge! Definitely worth digging for. (:

I'm not a huge mustard fan, but I do eat it occasionally. I have a ridiculous addiction to ketchup. I feel like every meal I eat is accompanied by either that or salsa. It's become almost humorous.

Ooh, I can see from the picture just how crispy and delicious that squash was! I've never tried mustard on it - my favourite condiment is ketchup all the way - but now you mention it, I might have to give it a go... :-)

Yum, Kabocha!! I think your camera definitely captured the size of those squash, lol ;) I've never thought of putting mustard on roasted squash, but I'll have to try it on the Delicata I bought yesterday!

I love mustard! everyone in my family seems to be more of a ketchup type but my heart has always belonged to mustard :) (especially the dijon and honey varieties)

Yum! Huge and tasty looking Kabocha! For condiments, I do love horseradish sauce or soy, dijon is another favorite :)

I love mustard. As a kid I didn't care for it at all. I have never purchased a Kabocha squash!
