Look Mom, I Can Make Cinnamon Buns Too!


I want to start branching out a bit and changing some things
 up with my blog posts. I don't intend my blog to be only photos
 of what I eat, but to feature recipes, product reviews, and other 
fun stuff. So I went into the kitchen today to do some baking!!!


 Vegan Squirrelly Buns

In a bowl measure 4 cups flour of your choice and set it aside


In a seperate bowl add 1 cup of lukewarm water, then
 dissolve in 1 teaspoon of sugar. To help the buns rise, pour in 
1 packet of instant yeast and let everything sit for 10 minutes


After 10 minutes, it should be bubbly (active yeast cells) 
Now stir together to make sure all the yeast is dissolved


Add to this 1/2 cup more lukewarm water1/2 cup brown sugar
 1 teaspoon salt and 1/4 cup oil. I used olive oil, but any type is fine


Add the liquid mixture into your bowl of flour, slowly mixing and 
stirring. Halfway through, roll up your sleeves, and get kneading!


When it's all mixed, place a towel over top and let the dough rise for
 1 hour. Place it in a warm or sunny spot for a better, fluffier dough. Don't 
do what I did, and forget to do this part! Hence why mine aren't fluffy!


Spread some flour on the counter to stop the dough 
from sticking, then start rolling it out with a rolling pin


Continue adding more flour if it starts sticking. You want 
the dough to be thin so make sure you roll it out really well


When it's spread out you can trim up the bits if you'd like. 
Then spread on 1-2 tablespoons butter of your choice


Here's the fun part. Sprinkle on approx. 1-1.5 cups of brown 
sugar. Enough to coat the dough evenly. Then toss on as much 
cinnamon as you'd like, measurement doesn't matter. After I added 
3/4 cup chopped walnutsYou can use raisins or pecan or dates too!


Gently roll it up and slice into approximately 8-10 pieces


Place into a well greased baking dish


Cover with a cloth and let it hang out and rise some more in a
 warm spot. I put mine in the sun by a window. After 1 hour put 
them into a preheated oven @ 400 F. Bake for 20-25 minutes


The sugar oozes to the bottom making them sticky and lovely!

Kelsey, I've GOT to try your "Squirrelly Buns" - they look sooo delicious! And they really look fluffy in the pictures! Usually when I make them they're dripping in butter, but your version looks much better :)

wow girl. i am so impressed! I am GF these days but even before i was, i was scared to make bread.yeast and the whole rising process scares me..i hate kitchen fails and so have never tried making bread.

and yes, certain ppl need to be told like it is, otherwise they go around spewing their crap somewhere else thinking that's acceptable!

Those cinnamon buns look great!!! I tried my hand at making some once and well.. they didn't turn out as pretty as yours and taste-wise? They were edible... I think. Hehe. Or let's just say no one fell ill. x)

Seriously lady, I am making these..tonight or tomorrow. What do you recommend for a GF flour...the bob's red mill gluten free baking flour? These look too good to be true, but I trust you so much that these are tasty.

Love that you posted a recipe! I love blogging about more than just daily eats too. It has been fun this week but hard to maintain! Sometimes it stresses me out..but telling a story with my blog and recipes...that is my favorite part and I hope that readers enjoy too, even if they are word-heavy posts.
