Don't Count Your Muffins Until They're Baked!

"Nothing in the world is more expensive
than a woman who's free for the weekend."

Started my pre-weekend off right with a Gluten Free
Carrot and Date Muffin with date sugar crumbles on top!

Then I used up some leftover veggies for lunch to make a Chicken Stir-Fry

Chickpeas, broccoli, spinach, red onion, mustard, and spices

But to really celebrate the weekend, a large
chunk of Planet Love Raw Chocolate is needed!

As I dug through the refrigerator I found some Alfalfa
Sprouts! Perfect for a quick and tasty salmon sandwich!

Veganaise and green onion please! Then load it on some bread

Top with some tomato and alfalfa sprouts, smack'em together, and call it a night!

BTW, if you want to know a secret... buy used books
from vintage stores! I got all these for TEN DOLLARS

Question: What book(s) are you currently reading?

AHHH!! YOU'RE SO RIGHT ABOUT THE USED BOOKSTORE BOOKS! I never thought of that. I'm going to have to go cookbook hunting in mine! How does your bookstore have such awesome vegan cookbooks though? I'm pretty sure mine has nil. BOOOHOOOO.

Also, I told myself repeatedly that you posted those muffins specifically with me in mind. Because you know how much I love your muffins.

:D

Ok, sadly, I have a stack of books to take on vacation and I can't recall the titles of any of them.....

Hehe your muffins always crazy me up.

I love that you buy used books from vintage stores. I used to do that all the time but the habit died off :( I'm thinking I need to revive it, though, because all those books for 10 bucks is seriously a good deal.

Right now I'm just finishing up To Kill A Mockingbird, and I'm not too sure what I'll start on next...

That dark chocolate is really, really, really pretty. I love that it has leaf designs in it! Almost too pretty to eat.. but not quite. ;)

I'm currently reading Lovely Bones and a million magazines. I buy so much magazines that I never finish them and I never find time to read actual books. :/

Everything looks so good and well cooked

In my opinion your dietary habits are perfect. You enjoy whatever you like in moderation. That 's why you are so beautiful!

I always have about five books on the go at once.
One of the ones that I'm reading at the moment is called 'Reality Transurfing'...yeah...it sounds a little crazy (because it is) but it's very fascinating. Hah.
Have a great weekend my love xxxxx

Love salmon! Especially in a wrap or sandwich...

I'm reading: The Everything Organic Cookbook for Babies and Toddlers, Vegan Planet, Twinkie Deconstructed and my latest issue of Mothering Magazine. All good stuff!

I've already read and would highly recommend:
Animal, Vegetable, Miracle by Barbara Kingsolver

...good dark chocolate makes the world go round!

Ha! I love that first quote! Oh yes, I basically only get books from the library and once in a while I even pay for them used :) I actually do buy used books in good condition as gifts for people who would appreciate the environmental factor that plays into that as well!

Are those rice crispies in that chocolate bar? That looks so delicious and pretty too!

I'm read the Time Traveler's Wife but honestly I'm about to give up because it is really boring. Maybe the movie is better?

I recently came across your blog (through randomly browing through blogs... it's always interesting where ya end up :) and am loving your entries!

I'm from Victoria as well, a health nut and am obsessed with food-related blogs! (Although I'm pretty sure all the great blogs increase my daily caloric intake as I always end up hungry in the end.. haha)

That chocolate looks DIVINE! Where'd ya snag that bad boy?

Also... nice work on the cookbooks! I'm always scouring second hand shops for vegan cookbooks, but have yet to be successful. Where'd ya hit that jackpot?

Hope you're enjoying the SUN! :)

Haha I LOVE that quote at the beginning of your post! And that muffin looks amazing! :)

Right now I'm reading Wicked...but it's taking me so long to get through it for some reason.

Hi love! You are too sweet, thank you for the nice comment you left me (re: my biggest loser comment). It made me so happy.

Yes I live in Ontario...right in downtown Toronto, actually. Not pretty like Victoria, but its a pretty good place to live. If you're ever in the area, let me know.

Those muffins look great (check out the muffins that I made recently...I gave you a shout out because I know you are the gluten free muffin queen). I also LOVE raw chocolate. So good.

I can't believe you got all those books for ten dollars. That is amazing. I actually shop at this used bookstore by my apartment all the time, but I usually end up spending over 40 dollars haha. Granted, I buy a lot more stuff than I would at a regular superchain bookstore. Let me know what you think of all of those...I would love to see if you make any recipes from How it All Vegan (I don't have that one, but hear its good). And I would love to know what Feeling Good- The New Mood Therapy is all about!

Right now I am reading Women, Food, and God by Geneen Roth but I've barely started it. I keep getting distracted because I'm so busy with life in general, and when I get a spare moment to breathe, I'm either blogging or blog reading.
Hope you are having a great weekend! xo <3
