Peanut Butter Bliss Bars
created by Snacking Squirrel
2 cups oats
2 cups puffed rice
1 cup coconut flour
1 cup spelt flour
1/2 cup brown sugar
1 cup chopped peanuts
1/2 teaspoon guar gum
1/2 teaspoon salt
Step A: Mix dry ingredients together in a bowl
1.5 cups peanut butter
1/2 cup honey
1/2 cup brown sugar
1 cup apple sauce
1 cup raisins
1/2 cup coconut
Step B: Mix wet ingredients together in a separate bowl
Adam's Crunchy Peanut Butter
Step C: Combine wet and dry ingredients
together (works best if you use your hands)
Important: Save a little less than half of this
mixture for later to be used as your crumble topping
Step D: Press the mix firmly into a greased baking pan
Step E: Bake in a preheated oven at 325 F for 20 minutes
Let crust cool as you prepare the filling...
Step F: Melt in a pot over medium-low heat and stir
Step G: Pour over cooled crust and spread with a spatula
Step H: While the chocolate is setting, place the remaining oat crumble on non-
stick baking paper before placing back into the oven @ 325 F for 10-20 minutes

Step I: Press baked crumble on top, refrigerate, cut, and eat!

oh my worrrd, these look heavenly!! my kinda peanut butter-y dessert, and coconut too! can't go wrong :) do you think the guar gum could be omitted?

Love that they use 1 c of coconut flour. I have a TON and that stuff multiplies, i swear :) so great way to use it up!
