It all started with Lauren's "Lemon Poppy Seed Muffins" which catapulted Aletheia's "Lemon Poppy Seed Basil Loaf" post before
landing back here to Lemon Poppy Seed Muffins again!
After a quick debate of Muffin or Loaf? I stuck to what I know best...
They're gluten-free and vegan
and even contain black beans (my sneaky addition)... or because I had some in the fridge I wanted to use up haha.
Lemon Poppy Seed Muffins
adapted from Aletheia Zoe
1 cup amaranth flour
1 cup sorghum flour
1/2 tbsp baking soda
1/2 tbsp baking powder
1/2 cup cane sugar
1/2 cup pureed black beans
1 cup apple sauce
1/4 cup water
1/2 cup poppy seeds
2 tbsp lemon juice
1 tbsp lemon zest
2 tbsp apple cider vinegar
1. Simply mix dry and wet ingredients seperately before mixing together.
2. Top with pumpkin seeds if you're feeling risky ;)
3. Preheat oven to 365F and bake for 25-30 minutes

LOVE baking! These look delicious, I used to have lemon poppyseed muffins with dinner as a child almost every week. The cartoons make it even better.
Baking is like my favorite thing ever. I think it has something to do with the smell that comes from the oven. Or maybe it's the tasty treats. Either or, I love it :) But I've never actually had a lemon poppyseed muffin... if I had poppy seeds, I'd definitely be giving these a shot.
ahahaha... the cartoon cracks me up! I feel that way with many different foods... lol
Yummy!! your recipe looks delicious hehe I need to try a recipe with black beans!

Wow! Not only do these look amazing, but they are chock full of great ingredients and they can be served to my vegan friends. I love it!
Mmmmm!!!Lemon poppyseed is very European :) My mama loves lemon poppyseed loaf cake, which she always picks up at the German Deli. Muffins would be awesome this way though... I love baking with lemon :)

They are picture perfect! If you'd told me it was from Green Cuisine I would have totally believed you. Maybe you can sell them your recipe ;) (...even if they can get it here for free. I think they'd take your talent, though!)
Those muffins look straight gorgeous!! I'm not big on lemon poppy anything, but I would definitely admire these for a while lol (:
Some night I get into the baking mood, and I go to town. Muffins are always fun and a good way to let your creativity shine. I always through random ingredients in my muffins! These look delicious. I've never cooked with sorghum flour before, and I need to try it!

oh those muffins look amazing!
I've never used amaranth flour. I've not come across too many recipes that call for it. Funny, I would have gone for mini loaves - I have a pan that has 12 mini loaf slots that I love to use. Too cute.
those look great!
the muffins look so pretty and BIG!! love the seeds on top.
I have been dying to try black beans in baking! Ahh it just makes me so nervous! But this recipe looks fabulous..maybe Ill get over my fear and go for it and try this out!
I'm going to have to attempt these! anything with lemon is good in my books, and I need more vegan recipes to ease my way from vegetarian to vegan!
The muffins look really great! I am a huge fan of lemon poppyseed, and I have been thining about baking a good breakfast muffin for the past few days. How is the muffins with the black beans?? that's so creative
HAHAAHAH I love the cartoon! Made me laugh! :)
I love lemon poppyseed muffins. My grandma used to always make them and they were so good. I may have to ask her to make me a batch next time she comes to visit. :D
I like how you snuck in some extra nutrients with the addition of black beans. I've always been to scared to add beans to my baking haha.

Those look so good. Lemon poppyseed muffins have always been one of my favorites. Hmm...since I'm meeting a friend later today for coffee, I might have to see what kinds of muffins are at the coop we're going to.

KELSEY YOU ARE MY FAVORITE BLOGGER RIGHT NOW!! Why you ask? because you recreated my favorite childhood food :) oh gosh i so bookmarked this recipe.

MUFFINS!!!!!!!!!!! I FINALLY had some muffins last night, after salivating at your posts for the past few months ;-) I didn't bake them, but I got the scrumpt. recipe for everyone. These look AMAZING! I LOVE poppyseed!
LOVE this recipe! I'm going to give it a try when I get home!
Have you ever looked at http://muffinfilms.com/? So cute!
Dear KELSEY,
You know the way to my heart. I knew there was a reason I posted this recipe. Just for you. I make gluten free lemon poppy seed breads just so you can turn them into BLACK-BEAN containing (woohoo), scrumptious muffins. I couldn't put any black beans in because the thing was so moist as it was!! How was yours in terms of the texture??
xo Aletheia
haha I love the comic!! Thats the same way I talk to cheese! :)
These look so tasty!!!
they look delicious!
those look so pretty! Especially with the seeds on top :) I'm in love!
Hey, you read my mind! I'm making these tonight and writing Lauren a guest post about them! funny! How were the beans in there? Sounds very very interesting!
Haha, that cartoon is too cute! Those muffins turned out great! I wished I was a better baker like you. Baking actually scares me. As soon as I see one ingredient on the list that I don't recognize, I turn and run the other way.
Gorgeous! And I love the beans in them. Those ingredients are right up my alley. ;)
That cartoon is too funny! That's one thing about the summer, I don't bake nearly enough as I do in the fall and winter!!
You are both crazy and a genius. And that is why I adore you.
the amazing muffins are endless on this blog! love the black bean addition!
you're so sweet. I could've used a hug. :( hah
LOL @ the comic strip. I wish I was a baker, it's just not in me.
That cartoon is really cute!
I love the muffins...the seeds on top make them so pretty. And the addition of black beans is genius. I've actually never tried black beans in baked goods...I've heard a lot of people talk about black bean brownies but never made them myself...and never heard of people using them in muffins but I could see that working. Great recipe love! xoxo
AaWw!!! I am
so flattered!! Thanks girl! You did such a fantastic job.
still have not jumped on board w/ the beans in desserts recipes..girl, you make me wanna get over it!!!!
Mmm thses look absolutely fantastic! I also mostly stick to what I know best - muffins. ;) Or maybe that's just an excuse so I can try one without people noticing. :)
