Pumpkin Millet Muffins
inspired by Cascadia Bakery
1 cup buttermilk
2 large eggs
1/2 cup millet
1/4 cup pumpkin seeds
Directions:
1. Preheat oven to 390F
2. In a bowl, beat together eggs, sugar, milk, oil, vanilla
and pumpkin puree, stirring until the lumps are removed
3. Stir in rolled oats
4. Toast millet in a dry skillet over medium to medium-high heat until lightly browned
5. Add toasted millet and pumpkin seeds to wet ingredients
6. In a separate bowl, mix the dry ingredients
7. Gently pour wet ingredients into dry
8. Fold together, remembering not to over mix
9. Scoop + over flow batter into muffin tins
10. Top with extra pumpkin seeds
11. Place in oven and reduce temperature to 360F
12. Bake for 25-30 minutes

These look so good! I wish they sold canned pumpkin puree in Australia - it takes so much longer to make it yourself to add to things.

Yumm I love how giant the muffin tops are! I've tried a recipe for pumpkin millet muffins from the Rebar cookbook but I think I changed too many things in the efforts to make them healthier and they didn't turn out so well. I love the crunch that millet adds!

I was looking for a pumpkin muffin recipe and I wasn't expecting you to have one! I made these except I didn't use millet or pumpkin seeds (didn't have any!). These are sooo good! The recipe made 24 regular sized muffins and a small loaf of bread! I decided to add dried cranberries to the loaf and I wish I added them to the muffins, too! I glazed the muffins and bread with honey, too! Delicious!

Can't wait to try this recipe. The Market on Millstream occasionally sells the pumpkin millet muffins. since I fell in love many years ago - a bag of millet is in my freezer, that little ancient grain gets thrown into all sorts of my baking!!
These are on my 'muffin to make' list for sure! Looks like they came straight out of the bakery!
