Such Sweet Sorrow


Since I mentioned yesterday that I will have to reduce my carbohydrate intake, as well as sugars, it occurred to me that 
I won't be able to eat the massive quantities of Sweet Potatoes in the New Year.



I don't think it's healthy to be addicted to the amount I am. 
Even though sweet potatoes are extremely healthy, having 
6-7 at one time just causes hypoglycemia. But slowly, 
I am working towards breaking this crazy habit!


But damn! These look good huh!


Time to stack the Sweet Potato Mountain again :)


Each one has a crispy outside and a tender inside... mmm

Perhaps flavoring another less starchy veg or even tofu with similar seasonings would help?

You're amazing that you can so many at once! :O And you won't have to give them up completely!

A thing that has worked very well for me (and that I still stick to) is to have a little protein with every meal. This will keep the blood sugar more stable and satisfy you longer. And I think there are lots of yummy things you can make with sweet potatoes and protein! Think sweet potato omelette, stir-fried sweet potato with chicken, baked sweet potato with greek yoghurt or sour creme (do you eat dairy?), baked salmon or sea trout on sweet potatoes, etc etc. Lots of possibilities! :D

After seeing that hemp chocolate on your blog, I made a similar thing of my own. It was super good! I pureed dates with walnuts and hemp seeds (they have a surprisingly yummy taste!) then I rolled the paste into balls and covered them with dark chocolate. It was YUM! Congrats to the winner :)

mmm they look goood. andyou just reminded me that i asked my mother to buy me some sweet potatoes, and now i have to go check if she did or not...hmm. anyway, i've heard that about sweet potatoes too! it stinks, but too much of anything=bad.

these look really great. ive made some roasted root veggies a couple times this winter so far: sweet potatoes, regular potatoes, parsnips, carrots, all coated in salt, rosemary and oregano. mmm..

Best of luck with your new goal! It will be easier to manage once it's not freezing outside b/c you'll be craving salads instead of potatoes maybe?
