Avocados are Good for Your Heart

From salads and sandwiches to dressings and dips,
avocados have been popping up everywhere these days

Here is my festive take on Mexican Cuisine; Toasted Brown Rice
Bread with Refried Pinto Beans, Shredded Chicken, Avocado and Salsa

And before I head off to teach a yoga class, I wanted to share some yummy
pictures Healthy Exposures took after making my Vegan Bran Muffins!

Look at all the scrumptious seeds and raisins :)

Questions: Do you like avocados? When was the
last time you ate one... and how did you prepare it?
(ie. in a salad, sandwich, smoothie, dressing, dip)

YUM! Those muffins look great! Although all you muffins look amazing. My husband really got me eating more avocados. He and his family are part Hispanic, so they down a ton of them. Guacamole is by far my favorite way to eat them! I can defiantly go through a bowl by myself.

I'm obsessed with avocados, and though I don't use it in sandwiches or salads as much as I should, I love turning it into guacamole!

Your dish looks delicious, but sadly I do not like avocados. I wish I did...I feel like I am missing out on something. Jessica made a beautiful version of your muffin!

Oh I love them. And will eat them pretty much any which way they can be made- guac? plain slices on a sandwich? No matter to me... :)

I loooove avocados! I actually had half of one last night mashed with a little lime juice and salt - make due guacamole!

I love avocados and usually add them to my salads or just spread them on some rice cakes. They are a vegan's butter ;)

Yes yes I am a big fan of the lovely avocado. Some of my favourite ways to eat them...
-avocado and seaweed salad
-chocolate avocado pudding
-blended up with basil, garlic, oil and spices for a salad dressing
-simply spread on toast and topped with black pepper!

Ah those bran muffins do look scrumptious!

The last time I can honestly remember having avocado was when my Greek boss made me homemade guacamole! He served it with pita chips and - get this - big chunks of deep fried cheese, with no coating! I had never had it before so I just had some on a spoon :) Yummy!

Mmm those muffins look fantastic! *adds recipe to future baking expeditions*

I love avocados. Admittedly, I don't eat them often enough, but usually I just slice 'em up and put them on a salad. Or taco. Or burrito. :)

And you are my muffin hero. Just wanted to get that out there.

I hated avocados for the longest time but eventually convinced myself to try them again. Slowly but surely I found discovered that they actually taste really refreshing. I think my favorite way to eat them is chopped ontop of a spicy mexican stirfry or used as a spread for a sandwich/wrap with kabocha and zucchini (inspired by Miss Choosing Raw, of course).

Have a lovely day!

Thanks for the shout-out Kelsey!! If only staring at the pictures would make them all reappear again. Those muffins went FAST, they were so delicious!
I wish I was an avocado fan...but it's just one thing I can't get myself to like :/

I've got blognesia...can't remember if you like all seafood but since the salmon post I have to recommend you try shrimp and avocado.
YUM They are a match, for sure.

I must admit that I still have to get into avocados ... I just ate on last week, and I prepared it simply with salt and pepper and a little lemon juice drippled on it, but I found it rather blah ... I mean, there are things you have an appetite for because you like them so much, and other things you don't actually dislike but don't have an intrinsic motivation to eat, and avocado falls in the latter category.

Christin@purplebirdblog said... [reply]

That looks fantastic. I ate half of a huuuuge avocado last night among many other things in a giant salad beast.

I love avocados!! I just made Avocado bread the other day : )

I love avocadoes and, in fact, I just made guacamole this past weekend! They are good for the soul as well as the body!

Lovee lovee lovee avos! I tried to get some the other day at the grocery store but they were waaay too mushy :( I usually just eat them in salads or mashed with some sweet potatoes in a wrap :)

I had half an avocado today in a salad with cucumber, yellow pepper, mango and feta cheese. Yum! I hate the way avocadoes have been labelled by some as an evil fatty fruit. It's a healthy fat! I especially love them mushed up for homemade guacamole.

I absolutely adore avocados and always have to one on hand. Last time I ate one was yesterday in a wrap with hummus and vegetables.

I HATE avocado... I wish I liked it, but the last time I had it was when my mom found one buried in the refrigerator and thought she'd just hide it in a salad. I nearly threw up, I was so repulsed.

I love avocados! I didn't use to though. A little over a year ago I thought they were gross and something I would never eat. Well, I guess you should never say never. :)

Avocados are my absolute favorite. Sliced on toast with salt and pepper is so yum, and recently I used pulp from my green juice to make a more substantial guacamole =). I got that idea from Gena at Choosing Raw.

Jess @ MTL Veggie said... [reply]

Avocados are pretty much their own food group in my diet :)
I eat avocados at least once a week, whether it's in sandwiches, as guacamole or as a topping on salads, tacos, and other fun Mexican inspired dishes.

I ADORE avocados! However, when I was little and living in California (where they're super cheap and show up in EVERYTHING), I hated them! I ate guacamole for lunch today, and had a brown rice/avocado sushi roll for dinner last night. :-)

Which brand of brown rice bread do you buy? I'm still on the hunt for a good GF bread!
