Cheesy Apple Baked Sweet Potato

I frequently find myself daydreaming of various
random and creative food combinations to try...

Like this "Cheesy Apple Baked Sweet Potato" made by mixing
1/2 cup cottage cheese, 1 medium diced apple, 1 tsp cinnamon, a
dash of stevia, and stuffing it into 1 large oven baked sweet potato

The difference between a randomly creative food combination idea and a
horribly concocted thought, is all in the taste test; This one was a winner!

Questions: Do you ever come up with random
food combinations and meals to make? Do they
usually taste good, or sound better in your head?

I think this sounds delicious! Too bad cottage cheese doesn't agree with me :( But chopped, baked apples sound delicious on top of a baked sweet potato!

I make weird combos, and I love them always :) But other people don't, like yesterday. I made burritos with beans, salsa and sweet potato, and my bf didn't like the potato in it. It was the best part!
Thanks for giving me this idea with the apple, sounds awesome!

is that a sweet potato? it looks unsweetened (ha). I think most things sound better in my head than when put into practice haha

Kelsey!
I think you should open up a sweet potato shop and have a menu with all your zillion creations! lol
You are too cute!

I think you should try melted marshmellows and maple syrup inside... mmmmmmm

This sounds fabulous! Please don't ever stop coming up with all your creative dishes. :D

I'm not usually too creative with my meals... I tend to rely on others for that haha.

I love that combination! It sounds so good.
My weird food combinations usually taste good to me, but other people think I'm nuts. My sister and I make this yogurt concoction using cereal, peanut butter, jam, and tons of mix ins (whatever we're in the mood for). I guess it is kind of like what bloggers call a yogurt mess, but most people in the real world think it looks like vomit. Anyway, I haven't made my yogurt concoction in forever, technically my naturopath banned me from eating yogurt and peanuts and sugar (jam) and wheat (cereal) so basically im allergic to it :( but now im craving it!

Random food combinations are the best! I've yet to make one that I didn't like. :) This looks amazing! I've definitely never had apples with my sweet potato before.

yum!! what brand of cottage cheese do you use? some taste "funky" to me!

Ha, it looks like you've found a new (favorite?) way to eat sweet potatoes - filled with awesomeness! :)

I think I would love this combination...I already know that my husband would hate it. It would have to be one of those things I make when he is not around. He really dislikes the sweet and savory mix...not that sweet potatoes are savory, but still.
Thanks for sharing your cool combination.
