Zucchini Quinoa Fruit Parfait


Sarena makes some of the most delicious and healthy gluten free meals, and 
after she posted a recipe for Quinoa Breakfast Fruit Bowl, I wanted to try it out


Zucchini Quinoa Fruit Parfait 
adapted from The Non-Dairy Queen


1/2 zucchini
1/4 cup dry quinoa
1/2 cup water
1 tsp cinnamon
a dash of stevia
1/2 cup berries 
1/2 cup fruit of choice


Directions:
A. Place 1/2 cup of water in saucepan and bring to a boil
B. Add 1/4 cup dry quinoa to boiling water and reduce heat
C. Cover and cook on low heat for 15-20 minutes
D. Chop or puree zucchini in a food processor
E. Add zucchini to cooked quinoa and mix in cinnamon and stevia
F. Scoop into parfait glass and cover with your choice of berries and fruits
G. Top with yogurt or Sarena's Coconut Cream


Adding the zucchini to a fruit parfait is a great 
way to sneak some extra greens into your meals!


The fruit I used were some sliced strawberries and soaked prunes


I wanted to top it with coconut milk and coconut cream sauce, but 
was all out of coconut flour... so I used some plain yogurt instead

That looks delicious! I love when zucchinis start to come back in season. My parents are growing some in the garden and they're popping up so quick!

This sounds so delicious! Quite honestly I would never think to make something like this. Who comes up with this stuff?! I love it! I'm doing a wellness class on how to incorporate more F/V into your diet, this recipe will have to be mentioned.

Oh my gosh, that looks so good! I need one now after not being home to eat this weekend! The prunes sound really good too! I bet figs would be good too when yours come in to season.
