I've grown tired of my typical Dinners, it's time I start switching things up!
Referring to my enormous list of Blogger Recipes, I decided to
make this Cheezy Vegetable Bake from Love Veggies and Yoga
A gigantic bowl of mixed vegetables: Broccoli, Kale,
Rainbow Chard, Leeks, Red Peppers, and Red Onion
2 Diced Potatoes, Frozen Corn, Edamame,
Beets, Carrots, and Frozen Cut Green Beans
I didn't have any Canned Vegetable Soup
on hand, so I used Miso-Cup Soup instead
Edwards & Sons Natural Miso-Cup Reduced Sodium Soup
Just add hot water and stir; You can see the tiny tofu pieces floating on top
I combined everything together in a glass baking dish
Admiring all the beautiful colours
For the "Cheezy" aspect of the recipe, I added 1/4
cup of Nooch (Nutritional Yeast) to the Miso Soup
Stirred together before adding extra spices, herbs, and seasonings...
Parsley Flakes, Bouquet Garni Spice Blend, Dill, Paprika, Cumin,
Garlic Powder, Onion Powder, Mustard Powder, and Cayenne Pepper
Then I poured the soupy mixture over the vegetables
Preheat oven to 400 Fahrenheit
Baked for approximately 50 minutes
I'm going to start making it a regular habit to feature more of your recipes because I
feel the creative culinary talents of bloggers truly needs more appreciation and credit :)

Thanks for the comment! Your blog is awesome - the pics are great and I'm definitely going to try your recipes! I, too, was a vegetarian for about 3 years - that is before bacon brought me back to the flexitarian world. I'll post some more veg/vegan recipes to share with you in mind. :)

Quick and simple dinners like this are the best. I love the miso soup idea, probably tastes so much better than the veggie broth anyways.
I always feel like your veggie-tastic meals make me look like a bad RD to be ;) I get in plenty of produce in my day, but man, you still put me to shame LOL
