Oatmeal Coconut Chews


Oatmeal Coconut Chews

I was in the baking mood and created some delicious Oatmeal Coconut Chew 
Cookies inspired by traditional Chinese Chews (without the addition of walnuts)


Ingredients

1 cup oats or cooking oats
1 cup shredded coconut
1/2 cup tapioca flour
1/2 cup icing sugar
1/2 cup brown sugar
1/2 cup vegan margarine
1/2 cup almond milk
1/2 tsp baking soda
1 whole egg (beaten)
1/4 tsp sea salt
Dash cinnamon


Directions

A. Preheat oven to 350-360 Degrees Fahrenheit
B. Combine dry and wet ingredients separately
C. Add the wet mixture to the dry and mix together
D. Spoon onto a greased baking sheet or line with parchment paper
E. Bake for 20-25 minutes until light-medium brown


Let cool for about 10-15 minutes, then enjoy!


They're chewy but still soft enough to be called a cookie


You can add nuts if you'd like for some extra crunch


Makes 6 large or 12 small chews
